About Big Mamma

Big Mamma is a French Italian restaurant group, the brainchild of Victor Lugger and Tigrane Seydoux. Over the past 10 years, we have opened the doors of 36 restaurants across Europe (France, Monaco, the United Kingdom, Spain, Germany, Italy, Belgium, and Ireland), the United Arab Emirates (Dubai), and Mexico (Mexico City).

Join the Squadra as General Manager @ London 🇬🇧

Due to our exciting expansion across the United Kingdom (and beyond), we are looking for a dynamic General Manager to join our Squadra. In this key role, you will have the opportunity to drive the success of your trattoria while embracing and upholding our core values: authenticity, excellence, meritocracy, and entrepreneurship.

Your areas of responsibility will include the following:

Operational Excellence:

  • Ensure the smooth operation of the venue on a daily basis: create a warm environment with a smiling team attentive to customers.
  • Achieve operational excellence: act as a communication link between different departments, between the front-of-house team and the kitchen, ensuring smooth flow of information across the board.
  • Propose ideas to improve the customer experience and maintain a continuous improvement mindset. Ensure the venue maintains a high rating on social media.
  • Manage privatizations with professionalism and precision.
  • Ensure 100% positive resolution of customer complaints and resolve any issues during service.

Performance Analysis:

  • Manage the consolidated P&L.
  • Ensure average spend per customer.
  • Alert and propose clear actions if the budget is not respected.
  • Manage optimized scheduling: adjust staffing according to activity while ensuring proper management of people costs.
  • Ensure the monthly inventory is completed.

Management:

  • "Be exemplary" in managing both the front-of-house and kitchen teams.
  • Maintain a motivated team with minimal turnover.
  • Supervise, motivate, and help the team succeed.
  • Energize the team and create a positive, active atmosphere.
  • Ensure the transmission of Big Mamma’s values.
  • In coordination with headquarters, create and lead a training program for the team.
  • Encourage active participation during services by leading by example and providing feedback on processes, communication with the team, and with customers.
  • Participate in recruitment: anticipate staffing needs with the recruitment team at headquarters, welcome new staff, and optimize the team structure.
  • Ensure HR follow-up: lead weekly management meetings with direct reports (managers and chefs). Identify and recognize team talent to nurture Big Mamma’s meritocracy.
