Global Head of Purchasing
We are looking for an experienced Global Head of Purchasing to join Azumi Restaurant Group, based in our London Support Office.
With restaurants across Europe, the Middle East, the US and Asia, and an exciting pipeline of new openings ahead, this is a senior leadership role with responsibility for shaping and leading our purchasing strategy across the global business. Our purchasing function plays an important role in how we grow, ensuring our teams have access to the right products, suppliers and partnerships while protecting the quality and standards our brands are known for. Reporting to the Chief Financial Officer, you will lead a team across Europe, the Middle East and the US and work closely with our Operations, Finance, Development and Legal teams.
What you'll do
You'll set the direction for purchasing across the group. That means building the operating model, governance and roadmap that bring consistency and visibility across markets, while leaving local teams the flexibility they need.
You'll also:
- Lead purchasing and category strategy across all areas of spend.
- Develop global, regional and local sourcing strategies that balance scale benefits with local market needs.
- Lead major negotiations with key suppliers, improving pricing, rebates, payment terms, service levels, quality and lead times.
- Build long-term partnerships with strategic suppliers, supported by a clear framework for segmentation, contracting and performance management.
- Use spend analytics and market intelligence to find opportunities for consolidation, specification optimisation and competitive tendering.
- Deliver measurable, sustainable savings and value, judged on total cost of ownership rather than unit price.
- Track inflation, commodity and FX movements, and manage supplier risk and resilience across critical categories.
- Act as the senior purchasing advisor to the leadership team, challenging decisions that would add unnecessary cost or risk.
- Lead and develop an international team with clear objectives, KPIs and development plans.
- Support new restaurant openings and our continued international growth.
- Embed responsible and sustainable sourcing in our category strategies and supplier standards.

I’m in my final year doing Economics and I don’t know whether to apply for grad schemes now or do a masters first. What do you think?
Honest answer — it depends on where you want to end up. A lot of top grad schemes (Big 4, civil service, banking) don’t need a masters. Let’s look at the ones you’d be competitive for now, and we can decide if a masters actually adds anything.
Also worth knowing: most autumn 2026 applications are open now. Timing matters more than you think.

Grad scheme, placement, apprenticeship? Not sure what you want yet — that's fine. Your agent talks it through with you and turns "I have no idea" into a shortlist.

What we're looking for
An established purchasing or procurement leader with experience across a complex, multi-site, multi-country business - ideally within hospitality, or another premium consumer-led environment. Strong category management expertise with strong commercial judgement, extensive negotiation experience and a track record of delivering measurable commercial value and sustainable savings. The ability to influence senior stakeholders across functions and regions, and to build alignment around group suppliers and standard specifications.
