The Megaro Collection is a privately owned modern hospitality group, established over thirty years ago in King’s Cross/St Pancras. While we are a collection of eclectic brands, each operation has its own distinct personality, just as our people are unique. The excellence we strive for is born from our passion and love for the industry.
The Group’s portfolio comprises three boutique hotels, nine meeting rooms, a rooftop terrace, an all-day dining Italian restaurant, a mixology cocktail bar and a further restaurant due to reopen.
The Megaro Collection is opening a new bakery shop, and we are looking for someone with experience and a truly entrepreneurial mindset.
We are now seeking an ambitious and entrepreneurial Head Baker to join the Group and take ownership of our bakery operation, supporting our hotels and restaurants with a carefully selected range of fresh breads, Italian viennoiseries and patisseries.
This is more than a production role. The Head Baker will be responsible for getting the bakery operational, developing the product range, establishing production systems and standards, opening the shop and creating a consistent supply of high-quality bakery products across our hotels and restaurants.
Our intention is not to offer an extensive range of products. Instead, we want to develop a focused and carefully curated selection, including authentic Italian specialities. We want the bakery to be recognised for the exceptional quality, consistency and authenticity of its products rather than simply for the quantity or variety available.

The ideal candidate will be professionally trained in Italian bread and viennoiserie, with a strong understanding of Italian baking techniques, ingredients and traditions.
As the person responsible for establishing the bakery, the successful candidate will also take ownership of due diligence, food safety, Health & Safety and operational compliance, ensuring that appropriate systems, procedures and records are implemented and maintained to the highest standards.
We are looking for a mature, resilient and calm individual who can remain composed and solution-focused under pressure and with bags of energy. The bakery will be a fast-paced environment, particularly during its opening and development stages, and the successful candidate must be comfortable multitasking, managing competing priorities and adapting quickly when challenges arise.
The ideal candidate will have previous experience as a Head Baker and will be extremely passionate about product development, highly creative and committed to delivering exceptional and authentic products.

This is initially a stand-alone, entrepreneurial position, requiring someone who is organised, professional, reliable, confident working independently and able to operate without constant supervision. As the bakery develops, the Head Baker will be responsible for building, training and managing a small team around them.
The role will report directly to the Owner of the Group, giving the successful candidate the opportunity to contribute meaningfully to the bakery’s development and long-term direction.
For the right individual, there may also be an opportunity for future participation in the business through a potential shareholding arrangement, subject to the bakery’s development and individual performance.
