What you’ll be doing?

This is an exciting time to join Brockencote Hall Hotel as our new Head Chef, following the recent launch of Malvern Restaurant – our newly reimagined 3 AA Rosette restaurant, created following a significant investment and inspired by the beauty of the Worcestershire countryside.

As Head Chef, you’ll lead the culinary direction of Malvern Restaurant and play a key role in shaping its next chapter. You’ll take ownership of the day-to-day running of the kitchen, leading your brigade to deliver exceptional food with creativity, consistency and genuine pride.

With menus celebrating modern British cuisine, seasonality and exceptional produce, you’ll have the opportunity to build on Brockencote’s strong reputation for locally sourced ingredients - including produce from our own kitchen garden and honey from our 12-hive apiary – while bringing your own ideas, personality and culinary expertise to the table.

Alongside our restaurant operation, Brockencote Hall is also a much-loved wedding and events destination. You’ll therefore oversee food delivery across the wider hotel, ensuring the same attention to detail, quality and memorable guest experience runs through everything from intimate dining and tasting menus to weddings, private events and special occasions.

You’ll lead from the front, planning and organising the kitchen operation, managing standards and performance, and creating an environment where your brigade can thrive. Just as importantly, you’ll be passionate about nurturing talent, developing future chefs and building a positive kitchen culture rooted in teamwork, accountability and pride.

What you’ll need?

To succeed as our Head Chef, you’ll be an experienced and inspiring culinary leader with a genuine passion for delivering food at 3 AA Rosette standard, alongside the commercial and operational understanding needed to lead a successful hotel kitchen.

You’ll Bring

  • Proven experience working at 3 AA Rosette level, ideally within a luxury hotel, fine-dining restaurant or comparable hospitality environment
  • Previous experience in a Head Chef role, or significant senior kitchen leadership experience with the readiness to take the next step
  • A genuine passion for modern British food, seasonality, provenance and ethically sourced produce
  • Strong operational and commercial awareness, with the ability to effectively manage food costs, labour, stock, suppliers and kitchen performance
  • Experience of delivering food across a varied operation, including restaurant dining, weddings and events
  • A supportive, approachable and modern leadership style;
  • A collaborative approach, working closely with the wider hotel leadership and front-of-house teams to create memorable experiences for every guest
