Role Description

The Head Chef role at Marston’s PLC in Chorley is a full-time, on-site position responsible for leading the kitchen operation and delivering high-quality food that reflects the pub’s character and guest expectations. Day-to-day, the Head Chef plans menus, oversees food preparation and cooking, ensures consistent presentation and portion control, and maintains high standards of food safety and hygiene. The role includes managing kitchen stock levels, controlling food costs, and working closely with the General Manager to support sales and profitability. The Head Chef trains, and schedules kitchen team members, fostering a positive, inclusive work environment built on teamwork, clear communication, and continuous improvement. The position also involves responding to guest feedback, supporting special events, and helping develop new dishes that enhance the overall guest experience.

  • Professional culinary skills, including experience as a Head Chef or Senior Chef in a busy pub, restaurant, or hospitality environment.
  • Strong kitchen leadership abilities, with experience managing, training, and motivating diverse kitchen teams.
  • Sound knowledge of food safety, hygiene regulations, and allergen management.
  • Menu planning and costing capabilities, including portion control, stock management, and waste reduction to support profitability.
  • Ability to work effectively in a fast-paced kitchen, maintaining quality and consistency during peak service times.
  • Excellent communication and collaboration skills for working with front-of-house teams and management.
  • Commitment to providing an inclusive, guest-focused service and supporting Marston’s community-based values.
  • Flexibility to work a range of shifts, including evenings, weekends, and holidays as required.
  • Relevant culinary qualifications or apprenticeship training are beneficial but not mandatory where equivalent experience is demonstrated.
