Job Title: Head Chef – Dulse Restaurant

Department: Culinary

Contract Type: Permanent

Salary: £45,000 per annum, plus service charge and excellent company benefits

Location: Milford Waterfront, Pembrokeshire


Lead the Kitchen at One of Pembrokeshire's Most Exciting Dining Destinations

We're looking for an inspiring Head Chef to lead the team at Dulse, our vibrant waterfront restaurant at Milford Waterfront.

Inspired by the Pembrokeshire coastline and the incredible produce on our doorstep, Dulse celebrates fresh seafood, locally sourced ingredients and modern dishes with a strong sense of place. It's a relaxed yet stylish dining experience where quality, creativity and genuine hospitality are at the heart of everything we do.

This is a fantastic opportunity for a passionate chef to make their mark, lead a talented team and help shape the next chapter of a growing and ambitious restaurant.


What You'll Be Doing

As Head Chef, you'll take ownership of the day-to-day running of the kitchen, ensuring consistently exceptional food, a motivated team and a culture that encourages creativity and development.

Your responsibilities will include:

  • Leading, coaching and inspiring the kitchen team
  • Creating and developing menus that showcase seasonal and local produce
  • Managing food costing, stock control and kitchen profitability
  • Maintaining exceptional food quality and presentation standards
  • Ensuring all food safety, HACCP and hygiene procedures are followed
  • Recruiting, training and developing future culinary talent
  • Driving innovation and continually looking for ways to enhance the guest experience
  • Working closely with senior culinary and operational leaders to achieve business goals

What We're Looking For

We're keen to hear from chefs who combine strong leadership skills with a genuine passion for great food and hospitality.

Ideally you'll have:

  • Professional culinary qualifications (NVQ Level 3, AAA Level 3 or equivalent)
  • Previous experience as a Head Chef, Senior Sous Chef or similar leadership role
  • Strong knowledge of menu planning, food costing and kitchen management
  • A thorough understanding of HACCP and food safety standards
  • Experience leading and developing high-performing kitchen teams
  • Food Hygiene Level 3 qualification
  • Experience within quality restaurants, hotels or rosette-standard operations
  • A positive, hands-on leadership style and a passion for delivering memorable dining experiences
