We are currently seeking an exceptional, innovative and commercially astute Head Chef to lead our exciting new Asian restaurant, launching in spring/summer 2027.

The restaurant will be inspired by some of the greatest culinary capitals of Asia, bringing together exceptional Japanese and Chinese cuisine, world-class drinks and cocktails, immersive design and genuine hospitality to create an experience unlike anywhere else in Scotland.

The new restaurant will be housed in the North Lodge, a standalone building nestled in the grounds of the hotel. Throughout the years, the lodge has served many different purposes, once housing the office of Jackie Stewart, who founded the Shooting School at Gleneagles in 1985.

Here's a bit more detail on what we see you doing in this role:

  • Leading our newest culinary venture, you'll bring together creative vision, exceptional leadership and commercial expertise to create a truly distinctive dining destination and set a new benchmark for Asian cuisine at Gleneagles
  • Shaping the creation and evolution of the menu, you'll showcase your culinary creativity through exceptional dishes and engaging tasting experiences for key stakeholders and colleagues, championing exceptional product knowledge throughout the kitchen and front of house
  • Bringing together quality, consistency and commercial awareness, you'll ensure every dish is meticulously costed, specified and documented while delivering against agreed financial targets
  • Ensuring the kitchen is equipped to deliver exceptional results every day, you'll lead workforce planning activities, managing staffing levels, rotas and holidays to support both operational success and team engagement
  • Building strong partnerships with our Restaurant Management and Front of House teams, you'll create a collaborative culture where communication, shared passion and attention to detail deliver an outstanding guest experience
  • Through inspirational leadership and coaching, you'll nurture a high-performing team culture where continuous learning, creativity and excellence thrive
  • Working closely with our Culinary Development Partner, you'll help shape team engagement, training, talent development and recruitment, building a high-performing brigade from the ground up
  • Leading from the front with a visible and hands-on approach, you'll build strong relationships across the business, working collaboratively with colleagues to deliver exceptional operational standards and guest experiences
  • Championing the very highest standards of food quality, consistency, food safety and health & safety, you'll bring a meticulous eye for detail and a proactive, solutions-focused approach to every aspect of the operation
  • Interacting with our guests, always warm, professional, helpful and doing everything you can to exceed their expectations; playing your part in making their stay with us luxurious in every way

  • A recognised expert in Asian cuisine, you'll bring the vision, creativity and passion required to establish one of Scotland's most exciting new dining destinations; an accomplished culinary professional who is driven by continuous improvement, always refining your skills, broadening your knowledge and striving for excellence
  • Significant experience working within high-quality, fast-paced Asian dining environments, with a clear understanding of what it takes to consistently deliver exceptional food and memorable guest experiences
  • Balancing creative thinking with operational excellence comes naturally to you, alongside a strong commercial awareness and a proven ability to deliver agreed financial and business outcomes
  • You have a comprehensive understanding of food safety, compliance and kitchen best practice, underpinned by an unwavering commitment to maintaining the highest standards at all times
  • Comfortable navigating multiple priorities and changing demands, you thrive in a fast-moving environment and take pride in delivering work of an exceptional level
