Mortimer House Kitchen
On a charming corner of Fitzrovia sits Mortimer House Kitchen, an Italian restaurant, bar and terrace. The menu brings to life fond memories of family summers spent in Orta San Giulio and the Amalfi Coast.
As Head Chef, you will play a crucial role in leading our kitchen, shaping menus and delivering consistently exceptional, ingredient-led food that reflects the character of the venue. We expect you to bring creativity, strong commercial and people leadership, and an unwavering attention to detail.
Responsibilities
- Lead the kitchen brigade, setting the standard for quality, consistency and presentation on every plate.
- Take accountability for kitchen GP, food cost, ordering, stock control and waste.
- Manage kitchen labour budgets and build rotas in line with forecast covers.
- Recruit, train, mentor and develop chefs at every level, building a positive and respectful kitchen culture.
- Build strong relationships with suppliers, ensuring quality, seasonality and value.
- Work closely with the front of house team to deliver smooth, joined-up service.
- Ensure full compliance with food safety, allergen management, and health and safety regulations.

Requirements
- Previous experience as a Head Chef or strong Senior Sous Chef in a quality, high-volume kitchen.
- Excellent cooking skills and a passion for seasonal, ingredient-led food.
- Proven experience of managing GP, food costs and labour budgets.
- Strong leadership skills, with a track record of developing kitchen teams.
- Level 3 Food Safety and thorough allergen knowledge or a willingness to work towards.
- Flexibility to work evenings, weekends, and holidays as required.
