About The Role
As Arcade's Head of Dough for Gracey's Pizza, you will lead the pizza operation and take ownership of the dough programme, pizza section and service standards. Reporting to the Head Chef, you will ensure exceptional food quality, consistency and pace of service while developing your team and maintaining the highest standards of food safety, cleanliness and operational excellence.
You'll Be Responsible For
- Leading all aspects of dough production, fermentation, storage and quality control.
- Ensuring every pizza is prepared to recipe and presented consistently.
- Driving exceptional service standards during busy services.
- Training, coaching and developing Pizza Chefs and junior team members.
- Maintaining outstanding food safety, hygiene and allergen compliance.
- Managing stock, forecasting dough production and reducing waste.
- Working closely with the Head Chef to improve operations and support team performance.
- Collaborating with Front of House to deliver an outstanding guest experience every service.

We'd Love To Hear From You If You Bring
- Previous experience leading a pizza section or dough programme in a high-volume restaurant.
- Strong knowledge of dough fermentation, hydration and pizza production techniques.
- Experience training and developing kitchen teams.
- Excellent understanding of HACCP, food safety and allergen management.
- Strong organisational skills with great attention to detail.
- A calm, positive attitude and the ability to perform under pressure.
- A genuine passion for quality ingredients and exceptional hospitality.
- A passion for food, cooking and genuine interest in pizza making.
- Pride in presentation and consistency.
