Thesleff Group is looking for an exceptional Head of Bars to take a leading role across the bar operations within our London portfolio.
This is not a traditional office-based Head of Bars position. We are looking for somebody who wants to be in the venues, alongside our Bar Managers and their teams, driving standards during live service and helping us develop some of the strongest bar operations in London.
Working closely with our Beverage Director and operational leadership team, the Head of Bars will bring consistency, energy and commercial focus across the portfolio while developing our people and ensuring our bars continue to evolve.
The Role
As Head of Bars, you will spend the majority of your working week within our venues, including five nights a week in active service.
You will:
- Work alongside Bar Managers during service to drive quality, consistency and exceptional guest experiences
- Mentor and develop Bar Managers and Assistant Bar Managers across the Group
- Ensure bar SOPs and operational standards are consistently followed
- Work with the Beverage Director on cocktail development, R&D, menu changes and beverage innovation
- Drive beverage revenue while protecting GP and controlling wastage and stock loss
- Develop and deliver training for bartenders, managers and floor teams
- Support the recruitment of senior bar talent and identify future leaders within the business
- Play a key role in succession planning across the bar teams
- Support new openings, activations and projects as part of the Group's operational task force
- Work closely with Operations, Marketing and venue leadership teams on commercial opportunities and activations
- Ensure excellent standards of health, safety, hygiene and bar organisation

About You
We are looking for an established Head of Bars, Group Bar Manager or senior multi-site bar leader who understands premium, high-volume hospitality.
You will have outstanding knowledge of cocktails, spirits and current global beverage trends, but just as importantly, you will know how to translate that knowledge into commercially successful bar operations.
You will be entrepreneurial, energetic and highly visible. You should enjoy coaching people on the floor, be comfortable challenging standards when necessary and have the credibility to work with experienced Bar Managers and senior operational leaders.

Experience within luxury, premium or destination bars would be particularly valuable, as would professional spirits or bartending qualifications.
This role requires genuine flexibility. Our bars are at their busiest during evenings and weekends, and our Head of Bars needs to be there when the teams and the business need their leadership.
