Head Butcher

We are looking for a highly skilled and experienced Head Butcher to join our dynamic culinary team. As a Head Butcher, you will be responsible for overseeing all aspects of the butchery and meat preparation operation, from high-quality meat preparation and production to managing inventory, controlling costs, maintaining food safety standards, and mentoring junior butchery and kitchen staff. This role requires technical expertise, leadership, precision, and a passion for delivering exceptional quality meat and food products to our guests.

This role is predominantly based in our King’s Place kitchen, with meat and butchery production distributed across our Central Hall Westminster and Southbank sites.

What You'll Do As Head Butcher

  • Work in conjunction with the Chef Director and culinary teams to oversee all aspects of meat preparation, butchery, portioning and production for all food outlets, including preparation of beef, lamb, pork, poultry.
  • Carry out professional butchery, including breaking down whole carcasses, primal cuts and larger joints where required.
  • Develop and maintain consistent butchery specifications, portion sizes and preparation standards across all sites, including café, restaurant and events.
  • Support the creation of weekly café, restaurant and event offers with high-quality meat products and dishes.
  • Maintain excellent knowledge of allergen information, traceability requirements and food safety systems.
  • Monitor meat yields and minimise waste through effective utilisation of all suitable cuts and off-cuts.
  • Check deliveries to ensure quality, quantity, temperature and specification are correct, and ensure products are stored correctly following stock rotation procedures.
  • Maintain accurate temperature records for fridges, freezers and meat storage areas, alongside cook-chill and hot-hold records where applicable.
  • Manage and monitor the performance of the butchery team, providing training, guidance and support where required.
  • Work collaboratively with chefs, kitchen teams, purchasing and operations to ensure production requirements are met.

What You'll Bring As Head Butcher

  • Experience in a professional butchery or meat production management role, ideally within a central production kitchen, catering operation, restaurant group or hospitality environment.
  • Knowledge of current food, culinary and meat trends, including seasonal produce and sustainable sourcing

This is a 5 days over 7 days operation, with flexibility required to support the needs of the business.
