Lucky Cat is one of five unique Gordon Ramsay Restaurant experiences at 22 Bishopsgate and Europe’s tallest restaurant - Asian inspired small plates, Robata grills, sushi and sashimi, exquisitely crafted in the open kitchen and raw bar.
Located on level 60 at 22 Bishopsgate, Lucky Cat by Gordon Ramsay offers breath taking, unparalleled views across the city.
Head of Production – Pastry
We are looking for an exceptional Head of Production – Pastry to lead pastry production across Lucky Cat and Bread Street Kitchen - 22 Bishopsgate & Lucky Cat – Mayfair.
This exciting senior leadership role sits at the heart of our pastry operation, overseeing production across three restaurants. Working closely with the Executive Head Pastry Chef, you will be responsible for driving quality, consistency and efficiency.
This is an exciting opportunity for an experienced pastry professional who combines exceptional technical expertise with strong operational and leadership skills, and who thrives in a fast-paced, high-volume environment.
Requirements
The Head of Production – Pastry must have:
- Proven experience as a Head Pastry Chef, Pastry Production Manager or equivalent senior pastry leadership role within a premium restaurant, luxury hotel or high-volume production environment
- Exceptional technical pastry skills across plated desserts, afternoon tea, petit fours and large-scale pastry production
- A strong understanding of recipe costing, food cost control, stock management and waste reduction
- Excellent leadership and people management skills, with a proven ability to motivate, develop and retain high-performing teams
- Strong organisational and time-management skills with the ability to manage multiple priorities while ensuring quality & consistency.
- A keen eye for detail and an uncompromising commitment to quality and consistency
- Comprehensive knowledge of food safety, HACCP and allergen management
- Strong communication skills with the ability to build effective relationships across kitchen and operational teams
- A commercially focused mindset with a passion for continuous improvement and operational excellence
- Ability to identify opportunities to improve quality, profitability and overall operational performance across all locations
