ABOUT THE ROLE

Job Location: Regent Street (London)
Status: Full Time
Compensation: Competitive

Position Summary:
The Head Pastry Chef is an integral part of the Back of House/Kitchen team. The Head Pastry Chef will assist in managing a team of Sous Chefs, Line Cooks, Prep Cooks, and Porters. While reporting directly to the Food & Beverage General Manager and the Executive Chef with a dotted line to the Director of F&B, the Pastry Chef will work closely with the Head Chef to set the daily direction for the Kitchen and Back-of-House team. They will be experts on all menu items, with particular attention to the pastry menu, including all individual ingredients, to ensure all final products meet standards and expectations set by the brand and Local and Federal regulations. Through their passion for the Food & Beverage industry, and culinary excellence, the Head Pastry Chef will drive the kitchen team to surpass all guests and company expectations with each item created.

RESPONSIBILITIES

Primary Responsibilities:

  • Directly manage the Pastry staff to ensure strong performance and operational excellence.
  • Maintain full familiarity with all menu items, with greater focus on the pastry menu, and ensure flawless execution across the team to exceed guest expectations.
  • Ensure all Food Safety Laws and regulatory requirements are consistently met in kitchen and storage areas.
  • Provide continuous training, coaching, and development for pastry staff.
  • Partner with the F&B General Manager and Front of House Manager to ensure adequate staffing and resources within the pastry department.
  • Communicate inventory needs, maintenance issues, and operational concerns promptly to the F&B General Manager and Front of House Manager.
  • Support the restaurant management team with housekeeping duties such as dusting, sweeping, waste collection, and other standard operational tasks.
  • Liaise with the VP of F&B and wider team on upcoming projects and strategic initiatives.
  • Participate in recipe costing, supplier engagement, and procurement discussions.
  • Collaborate with the Head Chef on HACCP documentation, implementation, and compliance.

Special Projects/Tasks:

  • Actively participate in the house croissant program, ensuring consistency, quality, and adherence to established standards.
  • Assist with inventory counts as required to support business needs.
  • Support the planning and execution of on-site and off-site events, including pop-ups and private guest events held outside normal operating hours.
  • Contribute to maintaining a safe, clean, and organized restaurant environment by completing standard cleaning procedures commonly associated with food and beverage operations.

REQUIREMENTS

Availability:

  • Open & flexible availability, including but not limited to evenings, overnights, and weekends as well as Holidays.
  • Availability to consistently work weekends, special projects, drops/releases or as the business’ needs require.

Licenses/Certificates:

  • Valid Food Handler Certificate
  • Valid Smart Serve Certificate

Experience:

  • 3+ years in a high-volume commercial kitchen
  • 2+ years in a Supervisory Kitchen role

Skills & Abilities:

  • Effective delegator
  • Thorough follow-through
  • Efficient multi-tasking
  • Ability to lift and move 13.6 kilos.
  • Ability to perform standard tasks that are related to retail operations including but not limited to, bending, twisting, and climbing ladders/step stools.
  • Ability to stand and walk for prolonged periods of time.
