We are now searching for a Head Pastry Chef to lead the pastry offering at Wotton House – a talented, hands-on chef with the creativity, passion and attention to detail to develop our desserts, afternoon teas and event offering and bring the Wotton Food Story to life through pastry.
This is an opportunity to take real ownership of pastry within a significant and diverse food operation, delivering everything from restaurant desserts and afternoon teas to weddings, conferences, private events and large-scale celebrations.

OUR HOTEL
Set within 13 acres of beautiful Surrey countryside, Wotton House is a unique destination hotel full of history, character and individuality.
Our food operation is diverse and fast-paced – from high-volume weddings, conferences and events to restaurant dining, afternoon teas, private events and special celebrations.
At the heart of it all is the Wotton Food Story. We want to celebrate seasonality, provenance and fantastic ingredients while giving our chefs the freedom to be creative, playful and a little unexpected.
And there is plenty here to work with.
With the freedom to source locally, grow ingredients on our own grounds, harvest seasonal crops and even use honey produced by our own Wotton House bees, we want our Head Pastry Chef to make the most of what surrounds us and turn it into part of the story on the plate.
Without a heavily prescribed brand food concept, you'll have the opportunity to bring your own creativity and personality to our pastry offering, developing desserts and experiences that feel distinctive to Wotton House.

A DAY IN THE LIFE OF A HEAD PASTRY CHEF AT WOTTON HOUSE HOTEL
What You'll Be Doing...
- Own our pastry offering – take the lead on pastry across Wotton House, developing an exciting and distinctive offering across desserts, afternoon teas, weddings, events and special occasions.
- Bring the Wotton Food Story to life – use seasonality, provenance and fantastic ingredients to create pastry that reflects Wotton House and its surroundings.
- Lead from the front – be a visible, hands-on leader who is just as comfortable creating and delivering alongside the team as you are planning the next menu.
- Get creative – bring fresh ideas, flavours, techniques and presentation to our pastry offering and don't be afraid to challenge what we've done before.
- Create memorable afternoon teas – help develop an afternoon tea experience that feels special, seasonal and unmistakably Wotton.
- Deliver for our events – produce consistently high-quality pastry and desserts for our busy wedding, conference, banqueting and private event operation, often at significant volume.
- Make the most of Wotton – incorporate local and seasonal produce, including ingredients grown within our grounds and honey from our own Wotton House bees.
- Lead and develop your team – support, coach and inspire the pastry team, sharing your knowledge and helping our chefs continue to develop their skills.
- Maintain exceptional standards – ensure quality, presentation and consistency remain at the heart of everything leaving the pastry section.
- Balance creativity with commerciality – develop exciting products and menus while considering food cost, portion control, waste and efficient production.
- Plan and organise – manage preparation and production effectively across a varied operation, ensuring the pastry section is ready for everything from afternoon tea to large-scale weddings and events.
- Champion food safety – maintain excellent standards of hygiene, allergen management, food safety and kitchen organisation.
- Work collaboratively – work closely with the Executive Head Chef and wider kitchen brigade, as well as F&B, Operations and Events teams, to deliver memorable experiences for our guests.

What We Need From You
- An experienced Head Pastry Chef, Senior Pastry Chef or Pastry Sous Chef ready to take the next step, ideally with experience in a hotel, events or similarly diverse hospitality environment.
- Strong pastry knowledge and technical skills, with a genuine passion for desserts, baking and creative presentation.
- Experience delivering pastry at volume, particularly for weddings, banqueting, afternoon teas or large events.
- A hands-on chef who enjoys being in the kitchen and leading by example.
- A creative mindset and the confidence to develop new dishes, menus and ideas.
- Excellent attention to detail and a commitment to consistently high standards.
- Strong organisational and planning skills, with the ability to manage multiple demands in a busy operation.
- A positive people manager who enjoys coaching and developing others.
- Good commercial awareness, including portion control, food cost, stock management and reducing waste.
- Strong knowledge of food safety, allergens and kitchen compliance.
- A collaborative and approachable style, with the ability to work closely with the wider kitchen and operational teams.
- The energy, personality and ambition to make Wotton's pastry offering your own.
