The Jugged Hare is a traditional British pub and restaurant located near Barbican in the City of London, offering a classic dining experience, warm atmosphere, and a strong focus on exceptional service. Role Overview

At ETM Group, being a Head Waiter is a senior front-of-house role and a key part of delivering exceptional dining experiences within our premium hospitality environments. You're not just delivering service - you're leading the floor, driving standards, and ensuring every guest receives a seamless and memorable experience that reflects our EPIC values.

Across our ETM Collection venues - from rooftop restaurants to refined dining spaces - our Head Waiters play a crucial role in overseeing service, coordinating teams, and maintaining a consistently high level of performance. You act as a link between the management team and the floor, ensuring service runs smoothly, efficiently, and with attention to detail at all times.

Working closely with the Restaurant Manager and senior leadership team, you will take ownership of service periods, manage sections and team allocation, and support the development of junior team members. This is a hands-on leadership role where you will lead by example, elevate service standards, and contribute to the overall success of the venue.

The Ideal Candidate Will Present

  • Proven Experience: You have strong experience as a Senior Waiter / Waitress or Head Waiter within a high-quality or premium dining environment.
  • Leadership Skills: You are a confident and capable leader, able to coordinate teams and manage service effectively.
  • Service Excellence: You deliver polished, attentive service and set the standard for the team.
  • Product Knowledge: You have a strong understanding of food, wine, and beverage offerings.
  • Guest-centred Approach: You are passionate about creating exceptional and memorable dining experiences.
  • Organisation & Efficiency: You can manage the floor, allocate sections, and ensure smooth service flow during busy periods.
  • Coaching & Development: You support and mentor junior team members, helping them develop their skills.
  • Professionalism & Resilience: You remain calm, composed, and solution-focused during high-pressure service.
