At Louma Country Hotel, we are passionate about creating exceptional guest experiences through outstanding food, hospitality and service. We are looking for a motivated and enthusiastic Junior Chef de Partie to join our culinary team and support the delivery of a high-quality food offering across the hotel.

This is a hands-on role for someone who is developing their career in the kitchen, takes pride in high standards, and is keen to learn from an experienced and passionate team.

About the Role

As a Junior Chef de Partie, you will support the Head Chef, Sous Chef and wider kitchen team in preparing, cooking and presenting dishes to Louma Country Hotel’s market leading standards. You will work across sections of the kitchen, developing your technical skills while helping to ensure service runs smoothly and consistently.

You will contribute to food preparation, section organisation, stock rotation, cleanliness and food safety, while learning to take increasing responsibility for your area during preparation and service.

Key Responsibilities

Kitchen Operations

  • Prepare, cook and present dishes in line with Louma Country Hotel standards and direction from senior chefs.
  • Support the smooth running of assigned kitchen sections during preparation and service.
  • Assist with food preparation, including washing, chopping, portioning, basic cooking and plating.
  • Maintain clean, organised and well-stocked workstations throughout the shift.
  • Help ensure ingredients, equipment and service items are ready for each service period.
  • Support stock control by receiving deliveries, checking quality and quantities, and storing items correctly.
  • Minimise waste through careful preparation, portion control and effective use of ingredients.
  • Report equipment faults, maintenance issues or stock concerns promptly to a senior chef.

Food Safety & Compliance

  • Follow all food safety, hygiene and health & safety procedures at all times.
  • Ensure food is prepared, stored, labelled, dated and rotated in line with FIFO and HACCP principles.
  • Complete required records accurately, including temperature checks, cleaning schedules and stock records where required.
  • Maintain excellent standards of personal hygiene and kitchen cleanliness.
  • Use and maintain appropriate PPE and safety equipment.
  • Identify and report hazards, helping to maintain a safe working environment for colleagues and guests.

Teamwork & Guest Experience

  • Work positively with chefs, kitchen porters, front-of-house colleagues and the wider hotel team.
  • Support the delivery of a market-leading food and beverage experience.
  • Act as an ambassador for Louma Country Hotel by maintaining professional standards at all times.
  • Respond constructively to feedback and use each shift as an opportunity to develop skills and confidence.
  • Contribute to a calm, organised and supportive kitchen environment, especially during busy service periods.

What You'll Bring / About You

We’re looking for someone who is:

  • Minimum 2 years experience in a high-end kitchen, hospitality, catering or food production environment
  • Understanding of HACCP, COSHH and food safety principles, and focused on maintaining excellent hygiene, presentation and food safety standards.
  • Reliable, proactive, eager to learn and open to feedback from senior chefs.
  • Organised, calm under pressure and attentive to detail.
  • Good communication skills and a positive approach to teamwork to work as part of a team in a busy kitchen environment and to accept responsibility individually.
  • Flexible and able to work evenings, weekends and during busy periods.
