The Role
As the Junior Sommelier you have the opportunity to develop your knowledge and passion for wine under the guidance of our head Sommelier. Working closely with our Sommelier & Wine Educator, you will provide a highly personalised, elegant service to our guests. If you love wine and want to build a career in the wine industry, this role is the perfect launchpad.
What You Will Do
- Assist the Head Sommelier and managers in the daily operations of The Windsor Brasserie.
- Develop deep food and wine knowledge to confidently advise guests on bespoke pairings.
- Ensure the main dining room and private dining spaces are fully prepared and operational.
- Attend and actively contribute to service briefings to maintain flawless service levels.
- Follow structured opening and closing procedures to keep the venue immaculate.
- Accurately issue bills, process payments, and handle cash/credit transactions as per company standards.
- Follow company procedures for POS systems (Micros/Symphony).
- Constantly assess potential revenue generating and saving opportunities.
- Conduct regular inventory counts and maintain accurate records.
- Conduct monthly stock takes with 2nd party stock taker and review results.
- Participate in daily briefings, handovers, departmental meetings and training sessions.
- Support colleagues and foster a positive team spirit.
- Demonstrate respect and sensitivity toward all colleagues and guests.

More About You
- Familiarity with spirits, cocktails, sake and non-alcoholic pairings is an advantage.
- Strong interpersonal and problem-solving abilities.
- Excellent verbal communication skills and high awareness of customer service.
- Patience and an ability to promote the menu in line with customer needs are highly valued.
