Junior Sous Chef

About the Role

As Junior Sous Chef, you will support your kitchen management team in leading the daily operation of one of the kitchens at The Ned.

Responsibilities

  • Work alongside the sous and head chef to lead the daily operation, overseeing the production of food, compiling the daily mise-en-place, and ensuring that all food is cooked and presented to our exceptional Ned standards
  • Support some people leadership tasks - including team recruitment, development and performance chats, onboarding new starters
  • Be a guardian of food quality and presentation, monitoring all food leaving your kitchen and providing coaching and feedback to the team where needed
  • Create and monitor a safe and clean kitchen environment, protecting our guests and team from any possible harm
  • Protect our excellent food safety ratings and audit standards by always keeping a close eye on procedures and practices, keeping impeccable records, and implementing action plans where necessary
  • Prepare all meat, fish, poultry, and vegetables

Requirements

  • Previous kitchen experience with a proven track record of delivering outstanding food is essential
  • Previous experience of supervising or managing a team is beneficial, but experienced chefs looking to take their next step may be considered
  • High standards are essential
  • An organised and detailed manner is necessary, as impeccable record keeping is needed to maintain records for our safety and audit standards
  • Creative flare is always welcome - our menus change seasonally, and you may be offered the opportunity to support with food design and creation
  • A calm demeanour and a genuine passion for providing guests with exceptional food is essential
  • Ideally this role is a step on the path to becoming a kitchen manager, so a desire to learn and progress is preferred, but not essential
