Our story
Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3-hour lunch.
They called it La Nouvelle Garde: a promise to eat and drink the French way, done properly, 100% homemade, cooked from scratch from the highest quality seasonal ingredients.
They served classic French dishes prepared with care, generosity and excellence in beautiful, relaxed spaces full of energy.
Guests loved it!
So they opened another one, and then another one. And 9 brasseries later, it was finally time to bring it to London.
In July 2026, in Sloane Square, Brasserie Olivia was born.
This is just the beginning of our London story, and we'd love you to help write the next chapter.
The role
As a Junior Sous Chef, you'll play a key role in leading every service.
You will work closely with the Sous Chef and Head Chef to support the day-to-day kitchen operation.
You will lead the team during service and ensure every dish leaves the pass to the highest standard.
You'll be confident working across all kitchen sections, maintaining food safety and quality standards, and setting the example through your organisation, communication and attention to detail.

What Success Looks Like
- You'll lead calm, organised and efficient services where every chef knows what they need to do.
- You'll ensure every dish is prepared, plated and served to the highest standard, every time.
- You'll confidently support every kitchen section, stepping in wherever needed to keep service running smoothly.
- You'll maintain a clean, safe and well-organised kitchen that is always ready for service.
- You'll communicate clearly with both the kitchen and front of house teams, creating a seamless experience for every guest.
- You'll coach and develop junior chefs, helping build a confident, capable and engaged team.
- You'll help manage stock, minimise waste and protect food cost, contributing to the overall performance of the kitchen.
What You'll Bring
- You're already working as a Junior Sous Chef, or you're a strong Chef de Partie ready to step up.
- You're confident working across all kitchen sections in a high-quality, high-volume kitchen.
- Strong leadership skills with the ability to organise, motivate and support a team during service.
- Excellent knowledge of food preparation, cooking techniques, food safety and kitchen standards.
- Reliable, hands-on approach with high personal standards, attention to detail and pride in delivering exceptional food.
