Mission

As Junior Sous Chef, you will support the Executive Head Chef and Sous Chef in the day-to-day running of the kitchen, ensuring the highest standards of food quality, consistency, hygiene and service. You will supervise the kitchen team, coordinate food production and take responsibility for the kitchen operation in the absence of the Sous Chef.

Key Responsibilities – Operational Excellence

  • Support the day-to-day running of the kitchen, taking responsibility for operations in the absence of the Sous Chef.
  • Supervise kitchen colleagues and coordinate assignments to ensure efficient, timely and consistent food production.
  • Participate in menu planning, food utilisation and requisitioning, taking guest demand, market conditions and menu popularity into consideration.
  • Ensure food is prepared fresh to order, consistently meets quality and presentation standards, and reflects the outlet concept.
  • Monitor cooking, portion sizes, garnishing and plate presentation, tasting dishes before service to maintain standards.
  • Ensure HACCP procedures, food safety, stock rotation, fridge/freezer standards and kitchen hygiene requirements are consistently followed.
  • Support effective payroll and resource allocation, ensuring productivity, efficient deployment and responsible management of utilities and equipment.
  • Train, develop and coach Chef de Parties and junior kitchen colleagues, delegating responsibilities appropriately and supporting their performance.
  • Monitor food consumption, stock levels and kitchen supplies, supporting effective stock control and minimising waste.
  • Ensure the kitchen operates in accordance with company policies, departmental procedures, health & safety requirements and applicable legislation.

What we're looking for

  • Previous experience as a Junior Sous Chef, Chef de Partie or similar role within a quality hotel or restaurant environment.
  • Strong knowledge of food preparation, cooking techniques and presentation standards.
  • Good understanding of HACCP, food safety, hygiene and health & safety requirements.
  • Experience supervising and supporting kitchen team members during busy service periods.
  • Ability to maintain consistent food quality and standards under pressure.
  • Experience with stock control, food rotation and kitchen requisitioning.
  • Good understanding of productivity, payroll and resource management.
  • Strong organisational and communication skills with a hands-on approach.
  • Ability to train, develop and motivate junior kitchen colleagues.
  • Professional culinary qualification or recognised cooking certification is desirable.
