At The Caledonian Edinburgh, our culinary team is at the heart of every guest experience from refined all-day dining to the vibrant atmosphere of The Court. We are seeking a Pastry Junior Sous Chef to help lead our kitchen brigade, delivering exceptional dishes crafted with skill, creativity and a passion for Scottish produce.

The Person

  • An experienced chef with strong leadership qualities and high culinary
  • Calm, organised and confident when leading a kitchen section or full service
  • A collaborative team player with excellent communication skills
  • Passionate about training and developing junior chefs
  • Strong understanding of food safety, HACCP and kitchen operations

The Role:

  • Support the Head Pastry Chef in leading, managing and motivating the kitchen team
  • Oversee daily food preparation, cooking and presentation to brand standards
  • Maintain smooth kitchen operations, stepping up in the Pastry Chef’s absence
  • Ensure food quality, consistency, cost control and minimal waste
  • Champion health & safety, hygiene and compliance across the kitchen

Key Responsibilities

  • Lead and support chefs during service, ensuring dishes meet specification
  • Maintain kitchen organisation, cleanliness and stock control
  • Assist with scheduling, staffing decisions and performance reviews
  • Collaborate with front-of-house to deliver seamless guest experiences
  • Provide on-the-job coaching and help develop training programmes for junior chefs.
