KITCHEN PORTER
PURPOSE OF THE ROLE
To support and contribute to the smooth running of the kitchen and back-of-house areas, maintain hygiene, organisation, and safety standards.
REPORTING
Sous Chef, Head Chef.
DEPARTMENT
Kitchen, Back of House.
Duties And Responsibilities
Pre-service:
- Ensure all kitchen and pot-wash areas are clean, sanitised, organised and fully ready for service, completing all routine cleaning tasks and preparing work surfaces, sinks and food-prep areas in line with daily standards.
- Ensure crockery, cutlery, pots, pans and utensils are washed, dried and stored correctly ahead of service.
- Assist with organising and cleaning refrigerators, freezers and cold storage areas.
- Support the receiving, lifting, unloading and packing of food and equipment deliveries, ensuring storerooms remain tidy and well organised.
During service:
- Collect, wash, rinse and sanitise pots, pans, utensils, crockery and cutlery efficiently to maintain continuous service.
- Prioritise washing of high-use equipment to support chefs during peak service periods.
- Maintain clean work surfaces and floors during service, responding quickly to spillages or hazards.
- Remove waste from kitchen areas, empty bins before they overflow, and recycle waste according to procedures.
- Monitor and restock cleaning materials as required, informing the Head Chef or Back of House Manager of shortages.
- Report any malfunctioning equipment, maintenance issues or safety hazards immediately.

Closing:
- Complete a full deep clean of kitchen areas, including floors, surfaces, walls and equipment as required.
- Ensure all food preparation areas are sanitised and left clean, tidy and compliant with hygiene standards.
- Carry out deeper cleaning tasks as part of the weekly cleaning schedule, as instructed.
- Assist with end-of-day cleaning and reset of refrigerators, freezers and storerooms.
- Ensure all waste is removed, bins sanitised, and recycling sorted as per procedures.
- Leave all stations re-set for the next shift, in accordance with daily cleaning rotas and checklists.
CUSTOMER SERVICE
- Ensure to prioritise customers above all tasks.
- Contribute to creating a welcoming environment, always greeting customers warmly and professionally.
- Exceed and anticipate customers’ needs, striving to accommodate special requests within company practice and procedure.
- Upkeep product knowledge to handle customers’ queries and ensure satisfaction.
- Handle customers’ complaints, escalating to managers when necessary.
- Provide help even if outside the specific role where suitable.
