Position Summary

Our jobs aren’t just about mixing drinks. Instead, we want to build an experience that is memorable and unique. Our bartenders have the basics down but are constantly on the lookout for new trends, micro-local offerings, and guests’ evolving needs. They are not just a beverage enthusiast, but also the host of the space. Their role goes beyond the bar itself to take ownership of guest service more broadly and do what needs to be done.

Bartenders will use their knowledge and expertise to make the bar look and function flawlessly. They will build relationships with others across the hotel and in the community, to anticipate and deliver on our guests’ needs. They should be passionate about the guest service experience but also have an eye for detail – from the money that moves through their hands, to the information they provide to guests, to the quality of their drinks.

No matter what position you are in, there are a few things that are critical to success – creating a safe workplace, following company policies and procedures, protecting company assets, maintaining confidentiality, and ensuring your uniform and personal appearance are professional. Bartenders will be on their feet and moving around (stand, sit, or walk for an extended period of time) and taking a hands-on approach to their work (move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance; reach overhead and below the knees, including bending, twisting, pulling, and stooping). Doing all these things well (and other reasonable job duties as requested) is critical for Bartenders – to get it right for our guests and our business each and every time.

Key Responsibilities

Guest Service & Experience

  • Welcome and acknowledge every guest in a warm, professional and engaging manner.
  • Provide attentive, personalized and knowledgeable beverage service.
  • Understand guest preferences and confidently recommend suitable cocktails, spirits, wines, beers and non-alcoholic beverages.
  • Prepare and serve beverages consistently, efficiently and to the required presentation standards.
  • Demonstrate excellent product knowledge and communicate beverage information confidently to guests.
  • Anticipate guest needs and respond positively and professionally to requests, questions and concerns.
  • Follow the Marriott service culture and appropriate service recovery procedures.
  • Maintain a professional and welcoming bar atmosphere.
  • Thank guests and provide a genuine farewell.

Bartending & Mixology

  • Prepare and serve classic and contemporary cocktails in accordance with approved recipes and presentation standards.
  • Demonstrate strong knowledge of spirits, liqueurs, wines, beers, mixers, garnishes and non-alcoholic beverages.
  • Support the development and introduction of seasonal cocktails and innovative beverage concepts.
  • Assist with menu development, cocktail trials, tastings and product evaluations.
  • Ensure consistency in cocktail recipes, portion sizes, presentation and quality.
  • Maintain appropriate garnish, syrup, infusion and preparation standards.
  • Ensure all bar equipment, glassware and workstations are clean, organised and ready for service.
  • Keep up to date with current beverage trends and relevant product knowledge.
  • Participate in beverage training, tastings and knowledge sessions.

Beverage Stock Control

  • Support effective beverage stock management within the bar.
  • Monitor stock levels and communicate replenishment requirements to the Restaurant & Bar Manager.
  • Ensure all beverages are stored correctly and securely.
  • Follow correct stock rotation and storage procedures.
  • Assist with regular stock counts and inventory checks.
  • Monitor high-value products and ensure appropriate controls are followed.
  • Maintain accurate records of beverage usage where required.
  • Identify discrepancies, shortages or unusual stock movements and report them promptly to management.

Beverage Wastage & Cost Control

  • Minimise beverage wastage through correct preparation, portion control and storage.
  • Monitor and report beverage wastage in accordance with hotel procedures.
  • Ensure damaged, expired or unusable products are appropriately recorded and disposed of.
  • Follow approved recipes and measures to maintain beverage consistency and cost control.
  • Support management in identifying opportunities to reduce unnecessary beverage costs and wastage.
  • Ensure complimentary drinks, spillages, breakages and wastage are recorded in accordance with hotel procedures.

Bar Operations

  • Complete bar opening, service and closing procedures to the required standard.
  • Ensure the bar is fully stocked, clean, organised and operational before service.
  • Prepare garnishes, mixers, syrups and other bar ingredients as required.
  • Maintain cleanliness of bar equipment, glassware, workstations, refrigerators and storage areas.
  • Follow clean-as-you-go procedures throughout service.
  • Ensure all equipment is used safely and correctly.
  • Complete daily cleaning and operational checklists where required.
  • Support the wider Food & Beverage team during busy periods and operational requirements.

Cash & Payment Handling

  • Record all transactions accurately through MICROS or the hotel's approved system.
  • Follow all cash handling, payment and accounting procedures.
  • Ensure all drinks and services are correctly posted and accounted for.
  • Follow property control and audit standards.
  • Report any discrepancies to the appropriate manager immediately.
  • Complete closing and cash-handling procedures in accordance with hotel policy.
  • Ensures that payment is received from all guests and that all payments, as well as all orders, are posted in MICROS.
  • Complies with the requirements of the Marriott Cashiering Responsibilities and Cashier Overage/Shortage SOPs.
  • Is responsible for the safe keeping of all keys.

Alcohol Compliance & Responsible Service

  • Follow all applicable Marriott, legal and hotel procedures relating to the responsible service of alcohol.
  • Check identification where required and follow the hotel's age-verification procedures.
  • Recognise and appropriately respond to signs of intoxication.
  • Refuse service professionally where required and immediately involve management when necessary.
  • Maintain awareness of guest safety and responsible alcohol service at all times.
  • Adheres to the Licensing Laws and Weights and Measures Acts.

Supporting Management

  • Work closely with the Restaurant & Bar Manager to support the smooth running of the bar operation.
  • Communicate operational issues, guest feedback, stock concerns and service challenges promptly to management.
  • Assist with beverage reports, stock information and operational checks when required.
  • Support the implementation of new beverage menus, promotions and seasonal concepts.
  • Assist with training and coaching colleagues on beverage knowledge, cocktails and bar standards where required.
  • Participate in pre-shift briefings, departmental meetings, training sessions and tasting panels.
  • Carry out other reasonable duties as requested by the Restaurant & Bar Manager or senior management.

Communication & Teamwork

  • Communicate clearly, professionally and respectfully with guests, colleagues and management.
  • Maintain effective working relationships with Restaurant, Kitchen, Events, Finance and other hotel departments.
  • Support colleagues during busy service periods.
  • Promote a positive team environment and contribute to a culture of respect and professionalism.
  • Share beverage knowledge and best practices with colleagues.

  • Consistently follow Marriott brand and hotel Food & Beverage standards.

Preferred Qualifications

Education

  • Hospitality qualification, beverage qualification or equivalent experience preferred.

Related Work Experience

  • Previous experience in a hotel, restaurant, cocktail bar or premium beverage environment preferred.

Bartending/Mixology Experience

  • Strong practical knowledge of cocktails, spirits, beverages and bar operations.
