HallMark is launching a new Meat Hygiene Inspector Trainee Programme, offering an exciting opportunity to build a long-term career in meat inspection while working towards industry-recognised FDQ qualifications in meat inspection.

We are looking for people who are interested in developing a career as a Meat Hygiene Inspector. Whether you are new to the meat industry or already have relevant experience, we want to hear from you.

Start dates are an ideal timeframe and may be subject to change depending on the recruitment and training process.
Two Trainee Routes
We are looking for candidates at different stages of their careers.
Trainee MHI – Entry Level
This route is designed for candidates with little or no previous experience in the meat industry, but who have the right attitude, interest and aptitude to develop a career in meat inspection. No previous meat inspection experience is required. Previous experience in an abattoir or the wider meat industry is welcomed but is not essential.
Trainee MHI - Experienced/Industry Route
This route is aimed at candidates who already have relevant experience in areas such as:
- Abattoir or meat-processing environments
- Food production or associated trades
- Food safety, quality or technical roles
- Agriculture or related industries
- Other relevant operational environments
Previous qualifications, learning and relevant occupational experience will be considered as part of the initial assessment process. Where applicable, this may help inform an individual’s training and development plan, subject to the requirements of the relevant FDQ qualification.

Working within operational meat establishments, MHIs carry out inspections and checks to help ensure that required regulatory, hygiene, animal welfare and food safety standards are maintained.
The role offers the opportunity to develop specialist technical knowledge while working in a professional and operational environment.
What Will the Trainee Programme Involve?
The programme is expected to combine:
- Structured theoretical learning
- Practical training within operational meat establishments
- Supervised workplace experience
- Formal assessment
- Development of specialist technical knowledge and skills
- The opportunity to work towards industry-recognised FDQ qualifications in meat inspection
- Ongoing development towards becoming a qualified Meat Hygiene Inspector
Training will be structured to support candidates throughout their development, combining classroom-based learning with practical workplace experience.
Where will you be based?
Employment and training opportunities will be available across HallMark’s Official Controls operational areas in England, with specific locations dependent on operational requirements and available trainee positions.
Poultry training and workplace development will primarily take place in Lincolnshire.
Red meat training and workplace development will primarily take place across the West Midlands, Gloucestershire, Bristol and surrounding areas.
Candidates should be comfortable travelling to their allocated training and workplace locations where required.

- Have an interest in food safety, animal health, animal welfare and public health
- Are willing to learn and develop specialist technical knowledge
- Can work confidently in an operational environment
- Have good attention to detail and can follow procedures accurately
- Can communicate effectively and work as part of a professional team
- Are reliable, responsible and committed to completing their training
- Are keen to develop a long-term career within meat inspection and Official Controls
Relevant experience in meat processing, abattoirs, food production, technical or quality roles, agriculture or associated trades is welcomed but is not necessarily required for the entry-level trainee route.

Employment
Our intention is for successful candidates to be offered a permanent contract, subject to meeting the final eligibility and selection requirements.
Further details regarding salary, working hours, specific locations, training arrangements and the qualification pathway will be confirmed as the programme is finalised.
Qualifications
Depending on the route and area of work, the programme is expected to support candidates towards the relevant FDQ qualifications, including:
- FDQ Level 2 Certificate for Proficiency in Poultry Meat Inspection
- FDQ Level 4 Diploma for Proficiency in Meat Inspection
The specific qualification pathway will depend on the role, operational requirements and the candidate’s previous experience and learning.
