Job Role: Multi-Site Executive Chef – Full Time - Sites in London & South

Location: London & South (with flexibility to travel to other sites like Southampton and Birmingham)

Pay: OTE up to 60k

About the Multi- Site Executive Chef Role

As Maki & Ramen’s Multi- Site Executive Chef, you will take overall responsibility for culinary operations across our restaurant sites, ensuring our food, people, and kitchen operations consistently meet the highest standards.

This is a senior multi-site leadership position, and we are looking for someone with proven experience managing culinary operations within a multi-site restaurant group or established restaurant chain. You will lead and develop our Head Chefs and kitchen management teams, drive consistency across locations, and work closely with senior management to support the continued growth of the business. Alongside maintaining exceptional food quality, you will have a strong commercial and operational mindset, with responsibility for food costs, kitchen performance, team development, compliance, and the successful implementation of new menus and restaurant openings.

Key Responsibilities

  • Lead and oversee culinary operations across multiple restaurant locations
  • Manage, coach, and develop Head Chefs and senior kitchen teams across the group
  • Maintain consistent food quality, presentation, recipes, portioning, and cooking standards across all sites
  • Lead menu development, recipe testing, and the implementation of new dishes
  • Establish and maintain clear kitchen operating standards and procedures across the business
  • Monitor site performance and identify opportunities to improve quality, efficiency, and profitability
  • Manage and control food costs, stock, ordering, waste, and kitchen-related expenditure
  • Work closely with senior management on business growth, new openings, menu strategy, and operational improvements
  • Support the successful opening and mobilisation of new restaurant locations
  • Ensure all restaurants maintain excellent food safety, hygiene, health & safety, and compliance standards
  • Build a strong kitchen leadership pipeline through recruitment, training, coaching, and succession planning
  • Regularly visit restaurant locations to review standards, support teams, and drive continuous improvement

Key Requirements

  • Proven senior culinary management experience within a multi-site restaurant group or restaurant chain is essential (at least 2 years).
  • Demonstrable experience overseeing multiple high-volume restaurant kitchens and managing operations at scale
  • Previous experience as an Executive Chef, Group Executive Chef, Group Chef, Area Chef, Culinary Director, or similar senior multi-site culinary role
  • Strong leadership experience, including managing and developing Head Chefs and senior kitchen teams
  • Excellent commercial awareness, with a strong understanding of food costs, labour, stock management, waste control, and kitchen profitability
  • Proven ability to establish and maintain consistent food and operational standards across multiple locations
  • Strong menu development and recipe implementation experience
  • Excellent knowledge of food safety, kitchen compliance, and operational best practices
  • Strong organisational and communication skills, with the ability to manage priorities across multiple sites
  • Ability to thrive within a growing, fast-paced restaurant business
  • Experience working with Asian cuisine would be a strong advantage, particularly Japanese cuisine, ramen, or sushi
  • Flexibility to travel between restaurant locations as required
