What you'll be doing

As a Night Kitchen Porter, you will play a vital role in maintaining the highest standards of cleanliness, hygiene and organisation within the kitchen and back-of-house areas.

Working predominantly overnight, you will be responsible for ensuring that all kitchen equipment, floors, surfaces, storage areas and associated back-of-house facilities are thoroughly cleaned and maintained to the standards expected of a premium Gordon Ramsay restaurant.

You will follow structured daily and deep-cleaning schedules, ensuring the kitchen is fully prepared for the following day's service and that all cleaning tasks are completed safely, efficiently and to a consistently high standard.

Key Responsibilities

Kitchen Cleaning & Hygiene

  • Thoroughly clean and sanitise all kitchen areas following each service.
  • Clean floors, walls, work surfaces, sinks, drains, shelving and other kitchen areas to a high standard.
  • Ensure all food preparation and cooking areas are left clean, hygienic and ready for the next day's operation.
  • Maintain excellent standards of cleanliness throughout the night shift.
  • Clean and sanitise bins and waste areas, ensuring waste is removed and disposed of correctly.
  • Keep pot wash, wash-up and kitchen porter areas clean, organised and hygienic.
  • Ensure cleaning equipment and chemicals are stored safely and correctly.
  • Report any cleaning, hygiene or maintenance issues immediately to the Kitchen Management Team.

Equipment Cleaning & Care

  • Thoroughly clean kitchen equipment including ovens, grills, fryers, extraction areas, refrigerators, freezers and other equipment as required.
  • Follow manufacturers' cleaning instructions where applicable.
  • Ensure equipment is cleaned safely without causing damage.
  • Clean removable equipment components and ensure they are correctly replaced after cleaning.
  • Maintain cleaning standards for high-use equipment throughout the operation.
  • Identify equipment requiring maintenance and report defects promptly.
  • Ensure equipment is left clean, dry and ready for use by the kitchen team.

Deep Cleaning Programme

  • Follow the restaurant's scheduled daily, weekly and monthly deep-cleaning programme.
  • Complete all allocated deep-cleaning tasks within the required timeframe.
  • Ensure areas that are not accessible during busy service periods receive appropriate overnight attention.
  • Maintain cleaning checklists and sign off completed tasks accurately.
  • Work closely with the Kitchen Management Team to identify areas requiring additional cleaning.
  • Take ownership of assigned deep-cleaning responsibilities and ensure they are completed to the required standard.
  • Assist with periodic specialist cleaning programmes where required.

Standards & Compliance

  • Consistently maintain the high standards expected within a Gordon Ramsay restaurant environment.
  • Follow all food safety, HACCP, COSHH, health & safety and company procedures.
  • Use cleaning chemicals correctly and safely at all times.
  • Ensure correct PPE is worn when required.
  • Prevent cross-contamination by using appropriate cleaning equipment and procedures.
  • Immediately report any hazards, spillages, pest concerns, broken equipment or hygiene issues.
  • Support the kitchen team in maintaining a clean, safe and professional working environment.

Overnight Preparation

  • Ensure the kitchen is fully cleaned and reset before the end of the night shift.
  • Ensure floors are thoroughly cleaned and dry.
  • Ensure kitchen equipment is cleaned and ready for the next service.
  • Ensure bins and waste areas are appropriately managed.
  • Ensure cleaning materials are replenished and stored correctly.
  • Ensure all cleaning schedules and checklists have been completed.
  • Communicate any outstanding issues to the incoming kitchen team or manager.

You must have the right to work in the UK to be eligible for this role. Documented evidence of eligibility will be required from all candidates prior to commencing employment.
