At Nobu, our kitchens are driven by creativity, collaboration and a relentless pursuit of excellence. As Sous Chef, you’ll play a pivotal leadership role, supporting the Executive Chef in delivering outstanding culinary experiences while guiding and inspiring the team behind the scenes.

Balancing operational excellence with creativity, you’ll help shape menus, drive standards and ensure every dish reflects the quality and refinement that define Nobu.

You will

  • Support the Head Chef in leading the kitchen, overseeing daily operations and maintaining exceptional standards across all culinary areas
  • Plan and direct food preparation, ensuring consistency in quality, presentation and service delivery
  • Contribute to menu development, innovation and the evolution of Nobu’s culinary offering
  • Manage kitchen budgets, food costs and labour planning to support overall profitability
  • Maintain strict food safety, hygiene and health & safety standards at all times
  • Ensure clear communication across departments, including menu knowledge, allergens and key information
  • Lead, mentor and develop the kitchen team, creating a positive and high-performing environment
  • Support training, progression and retention across the culinary team
  • Oversee quality control of ingredients, deliveries and finished dishes
  • Manage audits and implement continuous improvements to standards and operations
  • Assist with scheduling and ensure labour costs align with business needs
  • Collaborate with Marketing and F&B teams to support new concepts, activations and guest experiences
  • Drive service excellence by anticipating guest needs and supporting the full dining journey
  • Act as an ambassador for Nobu values of Family, Crafted, Smile and Kokoro in everything you do

You are an experienced Sous Chef or a strong Junior Sous ready to step up within a high-end, fast-paced kitchen. You combine strong leadership with creativity, organisation and commercial awareness. Passionate about food and team development, you thrive under pressure and are committed to delivering exceptional guest experiences through every dish.
