The Client

We are working with a distinctive, independent London restaurant group to appoint an Operations Manager as the business enters its next stage of development.

The business has grown from its independent beginnings into 3 established London restaurants, building a strong reputation around quality food, warm hospitality and a genuinely individual guest experience.

The next phase is focused on strengthening commercial performance across the existing estate, creating greater operational consistency and building the foundations for future growth.

The Role

The Operations Manager will take full day-to-day responsibility for the 3 London restaurants, reporting directly to the Board and operating as the senior operational lead across the business.

This is a broad, hands-on role with genuine ownership. You will remain close to each restaurant, supporting and challenging the management teams, maintaining standards and ensuring issues are identified and resolved quickly.

Commercial growth will be a major focus. You will take ownership of P&L performance and be expected to identify and deliver opportunities to increase revenue, covers and spend per head. This will include developing local sales activity, events and private dining opportunities, alongside using daily and weekly performance data to make better commercial decisions.

The wider remit will include people, recruitment, payroll, labour, stock, suppliers, reservations, maintenance, compliance and the consistent day-to-day running of the restaurants. You will work closely with both front and back of house teams and be comfortable moving between commercial priorities and the practical realities of running busy restaurants.

This is a role for someone who understands the numbers but remains firmly connected to the operation. On one day you may be reviewing P&L performance or developing a sales initiative, and on another supporting a busy service, resolving a supplier issue or helping a manager navigate a difficult people matter.

The Candidate

We are looking for an experienced multi-site hospitality operator who has ideally developed within independent, founder-led or smaller restaurant businesses.

You will understand what it means to operate without large central support functions and will be comfortable taking personal ownership across a broad remit. You will be commercially minded, operationally strong and confident making decisions independently.

You are likely to bring:

  • Multi-site operations experience within restaurants, hospitality or F&B.
  • A clear track record of personally driving sales and revenue growth.
  • Strong P&L understanding and the ability to turn numbers into practical action.
  • Broad operational knowledge across stock, suppliers, HR, payroll, reservations, menus, maintenance and back-of-house.
  • Experience developing strong site management teams and creating accountability.
  • A demonstrable record of building stable teams and maintaining low staff turnover.
  • The confidence to operate as the senior operational lead across multiple sites with minimal central support.
  • A self-starting, low-ego leadership style and the judgement to make decisions independently.
  • The ability to combine commercial thinking with a genuine understanding of hospitality and the guest experience.
