Operations Manager – Ireland

Dublin, Ireland | €90,000 + Car Allowance + 30%+ Bonus Opportunity

The Opportunity

Ireland’s hospitality scene is moving fast — and we’re looking for an exceptional Operations Manager to help shape what comes next. This is much more than a traditional multi-site operations role.

You’ll take responsibility for a growing portfolio of restaurants across Ireland, leading and developing General Managers, building strong teams and creating consistently brilliant guest experiences.

You’ll be equally comfortable on the restaurant floor, coaching a leadership team or getting into the detail behind the numbers. You’ll understand what great operations look like, know how to turn strategy into action and have the confidence to make decisions that move the business forward.

Most importantly, you’ll have the opportunity to help build something.

With further growth planned across Ireland, you’ll work closely with senior leadership and our property team to identify new opportunities and bring new restaurants to life — from evaluating potential locations and supporting pre-opening plans through to opening the doors and building successful local teams.

What You’ll Be Doing

You’ll lead the operational performance of a growing group of restaurants, creating clear expectations and giving your General Managers the support, challenge and freedom they need to succeed.

You’ll:

  • Coach, develop and inspire General Managers and their leadership teams
  • Create a strong performance culture built around accountability, energy and trust
  • Deliver outstanding standards across food, service, people and restaurant operations
  • Take ownership of commercial performance, identifying opportunities to grow sales and improve profitability
  • Use data and insight without losing sight of what is happening on the restaurant floor
  • Build strong succession plans and develop future leaders
  • Identify opportunities, solve problems quickly and turn ideas into action
  • Support the growth of the business across Ireland
  • Partner with property and project teams on future restaurant locations and new openings
  • Ensure every new opening lands with the right people, culture and operational foundations

Reasons to use Rodeo

I’m in my final year doing Economics and I don’t know whether to apply for grad schemes now or do a masters first. What do you think?

Honest answer — it depends on where you want to end up. A lot of top grad schemes (Big 4, civil service, banking) don’t need a masters. Let’s look at the ones you’d be competitive for now, and we can decide if a masters actually adds anything.

Also worth knowing: most autumn 2026 applications are open now. Timing matters more than you think.

Start with a chat, not a search bar

Grad scheme, placement, apprenticeship? Not sure what you want yet — that's fine. Your agent talks it through with you and turns "I have no idea" into a shortlist.

No noise. No "maybe this fits." Just roles with a clear explanation of why they're right — and where to focus when applying.

About You

You’re an experienced multi-site hospitality operator who knows how to deliver results through people.

You lead with confidence, but you’re grounded enough to stay close to your teams. You care about performance, but you understand that sustainable performance comes from developing great people and creating environments where they can do their best work.

You’ll probably enjoy this role if you:

  • Have significant multi-site restaurant or hospitality leadership experience
  • Have successfully led and developed General Managers
  • Understand restaurant P&Ls and the commercial drivers behind a successful operation
  • Know how to balance guest experience, people engagement and profitability
  • Are comfortable operating in a fast-moving, growing business
  • Enjoy coaching people rather than simply telling them what to do
  • Spot opportunities where others see problems
  • Can move between strategy and hands-on execution
  • Have experience supporting restaurant openings or expansion
  • Want the opportunity to influence how a business grows, rather than simply inherit an established operation
