Job Description

We are seeking an exceptional Pastry Chef de Partie to join the pre-opening culinary team of Delano London. Reporting to the Executive Head Chef, Senior Sous Chef, Sous Chef and Pastry leadership, you’ll take responsibility for your pastry section, delivering refined, consistent and beautifully presented desserts, pastries and baked items. You’ll lead by example, support the development of the pastry team and help create memorable experiences across the hotel’s dining outlets and events.

What you’ll do…

  • Take ownership of your assigned pastry section, ensuring all preparations and service are delivered to the required Delano London standards.
  • Produce pastries, desserts, baked goods, creams, custards, doughs, chocolates and other pastry preparations in line with recipes and specifications.
  • Support the Pastry Sous Chef and senior kitchen team with daily production, service, events, afternoon tea, room service and other hotel requirements.
  • Maintain high standards of presentation, precision, consistency and portion control across all pastry items.
  • Organise mise en place efficiently, prioritising tasks according to service requirements and communicating clearly with the pastry team.
  • Guide and support Demi Chefs de Partie, Commis Chefs and trainees working within your section.
  • Follow all food safety, allergen, hygiene, storage, labelling and temperature-control procedures.
  • Monitor stock levels, minimise waste and use ingredients responsibly while maintaining quality and creativity.
  • Contribute to pre-opening preparation, recipe testing, tastings, training, equipment checks and the establishment of pastry standards.
  • Work collaboratively with the wider kitchen and front-of-house teams to deliver a seamless guest experience.

Qualifications

What we’re looking for…

  • You have previous experience as a Pastry Chef de Partie or in a similar pastry role within a quality hotel, restaurant or bakery environment.
  • You have strong technical pastry skills and a genuine passion for desserts, baking, presentation and high-quality ingredient – some knowledge of mediterranean and Portuguese desserts it’s a huge plus.
  • You are organised, reliable and able to work calmly and efficiently in a fast-paced, high-volume operation.
  • You have a good understanding of food safety, allergens, hygiene and professional kitchen standards.
  • You take pride in consistency, attention to detail and the delivery of beautifully finished products.
  • You are a supportive team player who enjoys coaching junior colleagues and contributing to a positive kitchen culture.
  • You are flexible to work early mornings, evenings, weekends and holidays according to business needs.
  • You are excited by the opportunity to be part of a new luxury hotel opening and help shape its pastry identity.
