At Nobu Hotel London Portman Square, our kitchens are driven by innovation, precision and genuine hospitality. As Junior Sous Chef, you will play a key role in supporting the culinary leadership team, helping to deliver exceptional dining experiences while developing and inspiring the chefs around you.
Working closely with the Sous Chef and Executive Chef, you will help oversee daily kitchen operations, maintain the highest standards of food quality and presentation, and contribute to the continued success of one of London's leading luxury lifestyle hotels.
You will
- Support the Sous Chef and Executive Chef in the day-to-day management of kitchen operations
- Lead service within your area, ensuring dishes are prepared and presented to the highest standards
- Maintain consistency in quality, presentation and adherence to Nobu recipes and standards
- Support menu development, tastings and the creation of innovative new dishes
- Monitor food quality, stock levels and kitchen organisation throughout service
- Help manage food costs, minimise waste and support overall kitchen profitability
- Maintain the highest standards of food safety, hygiene and allergen management
- Coach, train and develop junior chefs, creating a positive and collaborative environment
- Support the induction and ongoing development of new team members
- Work closely with front-of-house teams to ensure a seamless guest experience
- Attend kitchen briefings and contribute ideas to improve quality, efficiency and guest satisfaction
- Ensure company and statutory standards are followed at all times
- Demonstrate a proactive, positive and solutions-focused approach to work
- Act as an ambassador for Nobu values of Family, Crafted, Smile and Kokoro

You are an experienced Chef de Partie or Junior Sous Chef with a passion for delivering exceptional food and memorable guest experiences. You thrive in a fast-paced, high-quality environment and enjoy supporting and developing those around you.
With strong culinary skills, excellent organisation and a positive leadership style, you take pride in maintaining high standards while contributing to a culture of teamwork, creativity and continuous improvement.
