Role: Pastry Sous Chef

As a Pastry Sous Chef at Nobu Hotel London Portman Square, you’ll play a key leadership role within our pastry and culinary team — guiding chefs, elevating creativity and helping bring the Nobu pastry vision to life. You’ll combine technical expertise with a calm, collaborative approach, ensuring every dish reflects Nobu’s commitment to quality, elegance and innovation. With a passion for flavour, design and service, you’ll support the Executive Chef in delivering memorable guest experiences across the hotel.

You will

  • Lead pastry preparation and ensure exceptional quality, presentation and consistency across all kitchens
  • Support menu development, creativity and innovation in line with Nobu’s culinary vision
  • Communicate menu details, allergens and key information clearly to relevant teams
  • Maintain high standards of food safety, hygiene and kitchen organisation
  • Assist with managing budgets, stock control, equipment and labour planning
  • Train, mentor and support chefs at all levels, fostering development and teamwork
  • Contribute to marketing activations and the creation of unique pastry experiences
  • Respond to audits, support operational needs and collaborate effectively across departments
  • Uphold Nobu values while delivering a calm, positive and proactive leadership style.

You thrive in a fast-paced, creative environment and enjoy leading, training and inspiring a team. With excellent organisational skills, a passion for innovation and a genuine commitment to hospitality, you’ll help shape an exceptional pastry offering that enhances the guest journey at every step.
