Production Brewer
Location: Round Corner Brewing, Melton Mowbray
Type: Full-time
Salary: £27,000–£30,000, depending on experience
Reports to: Head Brewer
Round Corner Brewing is one of the UK’s most awarded independent breweries. From our home in the historic Melton Mowbray Market, we brew modern, characterful beers that are sold in pubs, bars and retailers across the country, as well as through our own taproom. Since opening in 2018, our beers have won multiple gold medals and trophies at the International Brewing Awards, World Beer Awards, International Beer Challenge and European Beer Challenge.
With our production capacity expanding significantly, we are looking for a Production Brewer who takes pride in doing things properly and wants to play an important part in the next stage of our growth. This is a hands-on role covering the full production process: brewing, cellar work, packaging, quality and continuous improvement. You will work closely with our Head Brewer and the wider brewery team to deliver the production plan safely, efficiently and consistently.
Because we are a small team, everybody matters. We are looking for someone who takes ownership, communicates well and is proactive and self-starting.
The role
You will work across wort production, fermentation, cellar operations, packaging and quality. You will brew on our 20hL Le Hui steam-heated three-vessel brewhouse and package beer using our Pneumatic Scale Angelus CB50 canning line, alongside keg and cask production.
Key responsibilities
Brewing and cellar operations
- Run wort production on our 20hL brewhouse safely and consistently.
- Track fermentations and carry out dry-hopping, cellar additions and routine checks.
- Transfer beer to bright beer tanks and complete final quality checks before packaging.
- Take part in the weekend cellar roster.
- Complete clear and accurate shift handovers.

Packaging
- Operate our PSA CB50 canning line.
- Support keg filling, cask cleaning and cask racking.
- Complete quality checks throughout packaging runs.
- Help deliver packaging plans efficiently while protecting beer quality.
- Keep packaging areas clean, organised and ready for production.
Quality, safety and compliance
- Carry out routine quality checks including gravity, pH, yeast counts, dissolved oxygen, TPO, CO₂, VDK and microbiological testing.
- Complete CIP and SIP procedures across the brewhouse, tanks and packaging equipment.
- Verify cleaning using ATP testing and follow agreed SOPs.
- Maintain accurate and timely records in BREWW, including brew sheets, fermentation logs, cleaning records and raw-material movements.
- Support the brewery’s SALSA plus Beer accreditation and wider food-safety standards.
Development and improvement
- Work with the Head Brewer on single-batch releases, collaborations and trials.
- Identify problems early, conduct root-cause analysis and propose solutions.
- Contribute ideas that improve quality, consistency, yield, safety or efficiency.
- Build your technical brewing knowledge and work towards further IBD qualifications.
- Help maintain market-leading quality standards.
About you
You may currently be a Brewer or Assistant Brewer looking for greater ownership and experience across the full production process. You enjoy practical work and understand that brewing involves repetition, cleaning, record-keeping and attention to detail as well as producing great beer. How you work is as important to us as your technical knowledge.

We would like you to have
- Around two years’ commercial brewing experience.
- An IBD General Certificate in Brewing, apprenticeship in brewing, equivalent qualification or demonstrable equivalent knowledge.
- Experience across brewing and cellar operations.
- A genuine commitment to beer quality, food safety and safe working.
- The physical ability to lift and move 25kg safely and repeatedly.
- The flexibility to work the required production shifts and weekend cellar roster.
We may consider someone with less than two years’ experience where they can demonstrate strong practical capability, relevant brewing education and the attitude needed to develop quickly.
Useful but not essential
- Forklift licence.
- Packaging-line experience.
- Experience using BREWW or another brewery-management system.
- SALSA, HACCP or food-safety experience.
