Project Manager – New Opening / Concept Development

Location: London

Salary: £80,000–£95,000 + package

We are looking for an experienced Project Manager to lead the development and opening of an exciting new hospitality concept in London.

This is a hands-on role suited to someone who combines strong construction and project management experience with an understanding of restaurant operations and pre-opening. You will take ownership of the project from development through to launch, ensuring that timelines, budgets, construction and operational requirements remain on track.

The Role

You will work closely with the Operations, Marketing and wider leadership teams to coordinate all elements of the opening, from construction and project timelines through to recruitment, training and launch.

  • Managing the full project timeline from development through to opening
  • Working closely with contractors, consultants, suppliers and project partners
  • Overseeing construction progress, budgets, deadlines and project deliverables
  • Coordinating operational requirements throughout the development process
  • Supporting the recruitment and onboarding strategy ahead of opening
  • Working with the training team to ensure teams are fully prepared for launch
  • Coordinating marketing, PR and launch activity alongside the relevant teams
  • Maintaining detailed project plans, budgets and critical paths
  • Identifying potential risks, delays or issues and proactively resolving them
  • Acting as the key link between construction, operations, marketing and senior leadership
  • Ensuring the project maintains a high level of attention to detail throughout
  • Supporting the transition from construction and development into operational launch

About You

We are looking for someone with:

  • Proven experience managing restaurant, hospitality or hotel openings
  • A strong understanding of construction and development projects
  • Experience managing budgets, timelines and multiple external stakeholders
  • Previous experience taking a project from concept/development through to opening
  • Strong organisational skills and exceptional attention to detail
  • A practical understanding of restaurant operations and pre-opening requirements
  • The ability to manage multiple workstreams while maintaining clear priorities
  • Excellent communication and stakeholder-management skills
  • A hands-on, solutions-focused approach

A background within high-end hospitality, hotels, restaurants or lifestyle concepts would be highly advantageous.
