The Role

The main purpose of the Regional Executive Chef role is to plan, facilitate and implement the world-class culinary offering that delivers premium experience on match and non-match days across the London region and other future venues.

This role goes beyond the environment as it offers a wider Southern venues and the opportunity to unleash creativity, explore new culinary concepts, and build innovative partnerships that contribute to the long-term vision and strategic growth of the culinary department.

The Responsibilities

  • Lead, motivate and develop the culinary team to deliver exceptional food quality, service standards, and full compliance with health, safety, food hygiene, allergen, and HACCP requirements.
  • Oversee day-to-day culinary operations, ensuring service delivery, labour deployment, and departmental rotas are aligned to business needs, budgets, and commercial targets.
  • Develop and cost menus within agreed timescales, monitor food controls and stock management, minimise waste, and identify efficiencies to improve profitability and operational performance.
  • Build and maintain strong relationships with suppliers, assess market trends, and identify new commercial opportunities, products, and innovations that enhance the business.
  • Manage purchasing, ordering, stock takes, and inventory controls, ensuring accurate records, compliance documentation, and month-end reporting requirements are completed.
  • Support recruitment, training, performance management, and ongoing development across the culinary and wider matchday teams, creating a culture of continuous improvement and innovation.
  • Communicate effectively with clients, supporters, and internal stakeholders, respond proactively to changing requirements, attend business planning meetings, and ensure kitchens and kiosks remain match-ready through regular inspections and hygiene checks.

What We're Looking For

  • Qualified chef with relevant culinary qualifications or equivalent experience, supported by Advanced Food Safety & Hygiene, Allergen Management, and HACCP certification.
  • Experienced in leading high-volume, fast-paced hospitality operations, ideally within fine dining, stadia, arenas, events, or premium restaurant environments.
  • Commercially minded with strong operational, financial, and project management skills, capable of planning effectively, meeting tight deadlines, and delivering against budgetary targets.
  • Proven leader with a track record of building high-performing teams through coaching, engagement, training, and succession planning.
  • Highly organised and detail-oriented, with experience managing food controls, stock, compliance processes, supplier relationships, and operational administration.
  • Proactive problem-solver with excellent communication skills, able to respond quickly to changing business demands while maintaining high standards.
  • Flexible and adaptable, willing to work evenings, weekends, and event days as required in a non-traditional hospitality operation.
