The other night we had Andrew Virgin and Jordan Spitzer from Bespoken Spirits out of Lexington, Kentucky join us for a virtual tasting. Three samples on the table, and none of them were made the way you think.

Bespoken doesn't age in barrels. They start with young bourbon, cut oak staves down with a laser to multiply the surface area, seal them into a pressurized tank with the whiskey, and run the whole thing like a sous vide for a matter of days. Jordan called it amplifying extraction rather than speeding it up, and after tasting through three finishes built entirely on that process, I get the distinction.
