KITCHEN’S
At The Belfry, our flagship restaurant, the Ryder Restaurant, holds 2 AA rosettes and serves 700 meals daily with a buffet for hotel guests and conference delegates. Skilled chefs use fresh ingredients to create innovative dishes. We also offer four other unique food outlets: Sam's Bar & Kitchen for classic pub-style dining, Rocca's for Italian cuisine, The Brabazon Bar for handcrafted Afternoon Teas, and the Pastry Kitchen for desserts. Our Banqueting team caters to various events, ensuring seamless experiences. Salary
The base annual rate for this role is £55,000.00 per annum, plus service charge.
About the role
As Resort Head Chef at The Belfry, you will have overall responsibility for the resort's culinary operation, overseeing all kitchens and food outlets across the hotel. Reporting into the Executive Head Chef, you will lead a team of Outlet Head Chefs and kitchen professionals, ensuring exceptional food quality, consistency, innovation, and operational excellence throughout the resort.

You will be responsible for setting culinary standards, guest satisfaction, developing talent, and ensuring compliance with all food safety and hygiene regulations. This is a key leadership role with the opportunity to shape the resort's food offering and deliver outstanding guest experiences across multiple dining concepts.
You will also be responsible for:
- Leading and developing the Outlet Head Chefs, who will report directly into you.
- Providing strategic direction and operational support across all resort kitchens and food outlets.
- Ensuring consistent food quality, presentation, and service standards across the resort.
- Driving menu development, culinary innovation, and seasonal offerings.
- Managing food costs, labour budgets, stock control, and wastage to maximise profitability.
- Overseeing recruitment, succession planning, training, and development of all culinary teams.
- Ensuring full compliance with food safety, allergen management, HACCP, COSHH, and company policies.
- Supporting the delivery of major events, conferences, banqueting operations, and peak trading periods.
- Building strong relationships with senior stakeholders, suppliers, and other departments to enhance the guest experience.
About You
- Extensive experience managing multiple kitchens and delivering exceptional results in a high-volume operation.
- Proven experience managing and developing senior kitchen leaders, including Head Chefs.
- Commercially minded, with a strong understanding of budgeting, cost control, and driving profitability.
- Passionate about delivering exceptional food quality and guest experiences.
- Standards-driven, with meticulous attention to detail and a commitment to excellence.
- Experienced in menu creation, food trends, and culinary innovation.
- Strong leadership, communication, and stakeholder management skills.
- Expert knowledge of food safety, allergen management, HACCP, COSHH, and legislative compliance.
- Resilient and adaptable, with the ability to effectively manage competing priorities in a fast-paced resort environment.
