We are currently recruiting for a Restaurant & Bar Manager to join our dynamic Food & Beverage team. In this role, you will take ownership of the day-to-day operation of our restaurant and bar, leading the team to deliver outstanding service while driving guest satisfaction, revenue, and operational performance.

Responsibilities

Here's what your journey with us entails:

  • Lead, inspire, and develop the Restaurant and Bar team, setting the standard for exceptional service, professionalism, and guest engagement.
  • Take ownership of the day-to-day operation of the Restaurant and Bar, ensuring smooth, efficient, and commercially successful service.
  • Lead by example with a positive and supportive attitude, professional grooming, body language, and communication that reflects our brand standards at all times.
  • Be a visible and hands-on manager during service, supporting the team during busy periods and ensuring consistently high standards from guest arrival through to departure.
  • Ensure all colleagues understand and follow food and beverage policies, operating procedures, brand standards, and service expectations.
  • Conduct regular pre-shift briefings, communicating daily priorities, menu information, promotions, VIP guests, special requests, and operational updates to the team.
  • Work closely with the Executive Head Chef and culinary team to maintain excellent food quality and presentation and to develop menus, promotions, food and wine pairings, and seasonal initiatives.
  • Ensure the highest standards of food hygiene, health and safety, allergy awareness, sanitation, and cleanliness are maintained throughout all F&B areas.
  • Ensure responsible alcohol service and compliance with all applicable licensing, legal, and company requirements.
  • Drive revenue and profitability through effective upselling, maximising average spend and covers, and identifying opportunities to increase Restaurant and Bar sales.
  • Support the development and implementation of F&B promotions and initiatives targeting both hotel guests and external customers.
  • Monitor operational performance, labour productivity, departmental expenses, and revenue against business expectations and budget.
  • Assist with stock management, beverage purchasing, inventory control, portion control, and waste reduction to support strong financial performance.
  • Manage and develop colleagues through effective coaching, training, feedback, and performance management, creating a positive and inclusive working environment.
  • Build strong relationships with guests, colleagues, suppliers, and other hotel departments to ensure seamless hotel operations.
  • Handle guest feedback and complaints professionally and effectively, taking appropriate action to resolve concerns and protect guest loyalty.
  • Ensure the Restaurant and Bar are consistently presented to the highest standards and that equipment, furniture, and service areas are clean, safe, and operational.
  • Work with Engineering and other departments to report and resolve maintenance issues promptly.
  • Utilise Point of Sale and hotel systems effectively, ensuring procedures are followed accurately.
  • Support the wider Food & Beverage operation when required, including Room Service, banqueting, and other hotel outlets.
  • Continuously look for ways to improve service delivery, operational efficiency, guest satisfaction, and commercial performance.

Safety and Company Policies

  • Follow all company and safety and security policies and procedures.
  • Ensure compliance with food safety, hygiene, health and safety, and responsible beverage service requirements.
  • Report maintenance needs, accidents, injuries, and unsafe working conditions promptly.
  • Complete all required safety, food hygiene, and responsible beverage service training and certifications.
  • Ensure uniform and personal appearance are clean, professional, and in line with brand standards.
  • Maintain confidentiality of proprietary and guest information.
  • Communicate with guests and colleagues using clear, professional, and positive language.
  • Develop and maintain positive working relationships across the hotel.
  • Lead and support the team to achieve common operational, guest satisfaction, and financial goals.
  • Listen and respond appropriately to guest and colleague concerns.
  • Ensure adherence to quality expectations, Marriott standards, and service excellence.
  • Promote a culture of respect, inclusion, teamwork, and continuous improvement.

Preferred Qualifications

Education: High school diploma or G.E.D. equivalent required; Hospitality Management qualification or equivalent is preferred.

Related Work Experience: Previous supervisory or management experience within a restaurant, bar, hotel, or Food & Beverage environment is preferred.

Leadership Experience: Demonstrated ability to lead, motivate, coach, and develop a team.

Food & Beverage Knowledge: Strong knowledge of restaurant and bar operations, food and beverage service, wines and spirits, food hygiene, and responsible alcohol service.

Commercial Awareness: Understanding of revenue generation, upselling, labour productivity, stock control, and departmental financial performance.

Technology: Comfortable using Point of Sale systems, hotel systems, and standard software applications.

Communication: Strong verbal, written, listening, and interpersonal skills with the ability to communicate effectively with guests and colleagues at all levels.

Personal Attributes: Confident, organised, commercially aware, guest-focused, and able to remain calm and effective in a fast-paced environment.
