Job Description

Job Title: Restaurant and Bar Manager

Reports to: Operations Manager

Direct Reports: Restaurant Supervisor, Head Bartender, Bartenders, and Waiting staff

Hours: Full-Time, flexibility required including early mornings, evenings, weekends, and bank holidays

Role

  • Lead, mentor, and inspire the front-of-house team across restaurant and bar operations, covering all elements of service (Breakfast, Lunch, and Dinner) ensuring every guest receives an experience that feels genuine, warm, and personal.
  • Champion a guest experience that is confident yet unpretentious, polished yet always personal.
  • Collaborate with HR and the Operations Manager to support team training, succession planning, and long-term development pathways.
  • Foster a team culture that values ownership, enthusiasm, and a shared passion for food, drink, and service.
  • Conduct regular check-ins, feedback sessions, and performance reviews to ensure the team is confident, capable, and connected to the hotel's mission.

Operational Excellence

  • Oversee the day-to-day running of the restaurant and bar, ensuring smooth operations across all services from breakfast to dinner and evening drinks.
  • Manage rotas, payroll costs, shift planning, and team deployment to maximise productivity and ensure great work-life balance for the team.
  • Take full ownership of inventory, ordering, and stock control, working closely with suppliers to maintain consistent quality and value.
  • Monitor and manage departmental budgets and cost controls to ensure financial targets are met without compromising service standards.
  • Ensure full compliance with health & safety, licensing, food hygiene, and company policies.

Guest Experience & Standards

  • Collaborate with the Head Chef to develop food and drink menus that feel modern, seasonal, and aligned with The Met’s unique personality.
  • Ensure high service standards are consistently met and exceeded throughout all guest touchpoints.
  • Set and uphold clear standards of presentation, cleanliness, and attention to detail across both front and back of house.
  • Review guest feedback regularly and use insights to drive continuous improvement and innovation.
  • Lead daily briefings and service checks, ensuring everyone is aligned and prepared for each shift.

Driving Results

  • Analyse sales data, trends, and guest feedback to optimise menu pricing, promotions, and service flow.
  • Implement upselling techniques and train the team on how to maximise spend per guest without compromising the guest experience.
  • Identify opportunities to increase revenue through creative activations, packages, or value-added offers that reflect the lifestyle nature of the brand.
  • Monitor wage spend and ensure alignment with forecasted business levels.
  • Build strong supplier relationships to ensure the best quality products at the best possible value.

Shaping the Future

  • Be a key player in shaping and evolving the Restaurant and Bar identity of the hotel, helping to define what we serve, how we serve it, and why it matters to our guests.
  • Collaborate with the Operations Manager to create cohesive experiences across all food and drink touchpoints.
  • Work with the Operations Manager and Sales & Marketing team to develop engaging promotions, creative offers, and events that draw guests in and build word-of-mouth awareness.
  • Stay informed on industry trends and local competition, adapting strategy to stay relevant and compelling within the local market.
  • Identify new ways to surprise and delight guests through the bar and restaurant experience from service rituals to product choices and seasonal moments.

  • Be a visible and proactive leader during the working day, working flexible hours as needed, including evenings, weekends, and public holidays.
  • Support hotel-wide initiatives and cross-functional collaboration, contributing to a unified guest experience.
  • Represent the Restaurant & Bar department at internal meetings and take ownership of departmental communication.
  • Perform any other duties as required by the Operations Manager or other Senior Hotel Management to support hotel operations and guest satisfaction.
