Maki Nori is our modern, upscale Japanese dining concept, bringing together elevated sushi, refined Japanese-inspired plates, premium ingredients, and thoughtful hospitality.
We’re looking for an experienced General Manager to lead our London restaurant and take ownership of its next stage of growth.
This role calls for more than strong restaurant operations. We’re looking for a commercially minded hospitality leader who understands the detail required in an upscale environment — from developing a knowledgeable and confident team to driving sales, controlling costs, and ensuring every guest receives a consistently polished experience.
The Role
As General Manager, you will:
- Take full ownership of the day-to-day performance of the restaurant
- Lead, coach, and develop the management and Front of House teams
- Set and maintain high standards of service, presentation, and guest experience
- Build a team with exceptional knowledge of our menu, premium ingredients, and drinks offering
- Develop a strong sales culture through recommendations, upselling, and genuine guest engagement
- Take ownership of sales, labor, GP, stock, wastage, and overall commercial performance
- Manage rotas, recruitment, training, and team performance
- Work closely with the Head Chef to ensure strong alignment between kitchen and Front of House
- Drive guest satisfaction, reviews, repeat business, and local engagement
- Maintain excellent standards across compliance, licensing, health & safety, and restaurant operations
- Lead from the floor and remain visible and hands-on during key services

What We’re Looking For
- Proven experience as a General Manager or strong Deputy/Assistant General Manager within a quality-led restaurant
- Experience in an upscale, premium, or refined dining environment is highly desirable
- Strong commercial understanding, including sales, labor, GP, and cost control
- A genuine passion for hospitality and delivering memorable guest experiences
- Strong food and beverage knowledge with the ability to develop this across the wider team
- Confident people leader with experience recruiting, training, and managing performance
- Excellent communication and problem-solving skills
- Highly organized, commercially driven, and calm under pressure
- A hands-on leader who is comfortable being present on the floor and setting the standard for the team
