Company Description

We are looking for a Restaurant General Manager to be part of our team for The Hoxton, Southwark in our Seabird restaurant.

The Hoxton, Southwark, the third Hoxton in our hometown of London. This London borough is known for its colourful history. Right here is where famous London pub The Prince Albert once stood. Patrons would bet on sport from their barstool, handing fistfuls of cash to the pub’s very own licensed bookie!

We have 192 bedrooms, 2 restaurants- Albie & Seabird and our first Working From_ location not just in London but Europe!

Albie is our all-day neighbourhood restaurant, serving up familiar classics with a twist, inspired by the diverse international food scene of the surrounding neighbourhood. Seabird is our rooftop restaurant on the 14th floor, boasting an impressive raw bar, London’s longest oyster list and panoramic views of the city.

Seabird:

Enjoy panoramic views in the heart of Southwark. Featuring an array of sea-to-table offerings with Portuguese and Spanish influences.

Job Description

What you’ll do…

Reporting to our Director of Food & Beverage, you'll be a visible, hands-on leader who spends the majority of your time on the restaurant floor, leading from the front, developing your team and delivering exceptional guest experiences while driving the commercial success of the business.

  • Own the day-to-day operation of Seabird, balancing operational excellence with commercial performance and ensuring every service runs smoothly while continuously looking for ways to improve.
  • Lead, inspire and develop a large front of house team, creating a culture where people feel supported, challenged and empowered to deliver their very best every day.
  • Drive performance through your people by coaching in the moment, giving regular feedback, recognising great performance and holding high standards that create consistently brilliant guest experiences.
  • Take ownership of the commercial performance of the restaurant, with a strong understanding of P&L, labour, payroll and productivity. You'll use your commercial acumen to make informed decisions that deliver exceptional hospitality alongside strong business results.
  • Be obsessed with the guest journey, constantly looking for opportunities to elevate the experience, build loyalty and create memorable moments that keep guests coming back.
  • Work collaboratively with the kitchen and wider hotel teams to deliver one seamless guest experience, building strong relationships across the business.
  • Create an environment where your team genuinely enjoys coming to work, developing future leaders while maintaining high engagement, accountability and operational standards.
  • Continuously look for smarter, more efficient ways of working without ever compromising on quality, service or the integrity of the Seabird brand.

Qualifications

What We’re Looking For…

  • Previous experience as a Restaurant General Manager, or in a similar senior restaurant leadership role, within a busy, high-volume hospitality environment.
  • A hands-on operator who thrives in the heart of the action. You're happiest on the restaurant floor, coaching your team, supporting service and leading by example rather than managing from behind a desk.
  • Proven experience leading, inspiring and developing large front of house teams, creating a culture where people feel empowered, accountable and motivated to deliver their very best.
  • Commercially astute with a strong understanding of P&L management, labour, payroll, productivity and operational performance. You know how to balance exceptional guest experiences with delivering strong business results.
  • A natural people leader who believes great guest experiences start with engaged, well-supported teams. You're passionate about coaching, developing talent and creating future leaders.
  • Guest obsessed, always looking for opportunities to raise standards, improve the guest journey and create memorable experiences that keep people coming back.
  • You've got a sharp eye for opportunity, always looking for ways to grow revenue, improve efficiency and manage costs without compromising on quality, service or the guest experience.
  • A true passion for hospitality and delivering experiences that reflect the integrity of our brand.
