Who are we?
Estelle Manor is a rural retreat set on an 85-acre estate in Oxfordshire. The manor has four restaurants, an extraordinary 3,000 sq metre Roman-inspired spa- Eynsham Baths, 108 bedrooms and a gym with class studios and padel courts. Plus, there’s a kids’ club for the little ones and a workspace.
We are looking for an inspiring General Manager to lead our Billiards front of house restaurant team.
Here's a bit more detail on what we see you doing in this role:
As the General Manager of The Billiards, you will provide leadership and management to the front of house team, ensuring the smooth day-to-day running of the restaurant and consistently delivering an exceptional experience for our members and guests. You will lead from the front, setting the tone for service and culture while working closely with the F&B Senior Leadership team to deliver the vision and strategy for the restaurant.
You will have overall responsibility for the restaurant's operations, team performance, financial targets, service standards and guest experience. You will also oversee staff management, training and development, equipment and maintenance, sales reporting and strong communication across all levels.
Who we are looking for:
- Previous experience as a General Manager or senior Restaurant Manager within a luxury hotel, members' club or premium hospitality brand.
- Excellent communication skills, with the ability to build strong relationships with colleagues, senior management, members and guests.
- A team-oriented, positive, driven, organised and solution-focused leader.
- Proven experience managing daily operations, service standards, set-up and operating procedures.
- Strong commercial awareness and experience working towards financial targets.
- Confident in building and fostering team spirit, developing talent and creating an environment where colleagues can bring the best of themselves to work.
- Ability to perform under pressure, make decisions and deliver results to deadlines.
- Someone who takes responsibility and initiative, proactively explores issues and generates new ideas through creative thinking.
- Passionate about delivering an exceptional guest experience, with a keen eye for detail.
- A genuine passion for hospitality, service and hosting.

About The Billiards:
The Billiards offers a menu of traditional Chinese dishes, with a particular focus on dim sum and showstopping favourites including char siu belly pork and an irresistible whole roast duck.
The striking space features limed plaster walls and serpent-shaped velvet banquettes in shades of Malachite green, lit by Murano glass chandeliers overhead. The Billiards’ Private Dining Room provides the ideal setting for more intimate celebrations.
