The doors open on 28 November in the heart of historic Smithfield, bringing together thousands of years of London's history through world-class events, experiences, and hospitality.

About Us
We are looking for a Restaurant Manager who loves bringing places to life. Someone who gets genuine satisfaction from seeing familiar faces return, remembers people's names and favourite dishes, and believes hospitality is about making every guest feel they belong.
This is far more than a restaurant management role. It's an opportunity to shape Clerks House from day one, creating a destination that becomes part of London's daily life. A place where seasonal food, warm hospitality, and good company bring museum visitors, neighbours, and friends together from morning through to evening.
About Clerks House
Clerks House will be Smithfield’s new all-day dining room and bistro rooted in London’s culinary history. Located in the heart of Our Time on the General Market ground floor, the 140-cover restaurant will celebrate seasonal produce, craft, and skill alongside the cultural influences that define London’s food scene. Serving breakfast, lunch, afternoon tea, and dinner, alongside weekend brunch and Sunday roasts, the food is nostalgic without being dated. Comforting and thoughtful.
Celebrating the history of the market, menus will feature beef and lamb from Green & Fortune’s own farm and pies curated by Robin Gill. Guests can expect dishes such as 'Mutton stew with barley, root vegetables, and fresh herbs' and a take on the traditional 'Billingsgate sandwich' - hand dived scallop, crispy smoked bacon, scallop roe butter.' There will be a range of seasonal plant-based dishes, and smaller portions of main dishes for young visitors. A weekly changing selection of wines by the glass will showcase a cohesion of old and new world and skin-contact wines from small growers.

The Role
We're looking for a Restaurant Manager who naturally builds relationships, leads from the floor, and takes pride in creating a team that genuinely enjoys looking after people. Someone who is curious about great food and drink, loves sharing the stories behind our producers and menus, and understands that the smallest moments of hospitality are often the ones guests remember most.

Key Responsibilities
- Operations: Lead the day-to-day restaurant operation, setting the standard for service, quality, and guest experience.
- People: Build, coach, and inspire a high-performing team, creating a culture of excellence and continuous development.
- Food and Guest Experience: Bring our menus to life by championing seasonal produce, sharing the story behind every dish, and creating meaningful connections between the kitchen and our guests.
- Commercial Performance: Maximise commercial performance by combining operational excellence with memorable guest experiences that build loyalty, repeat business, and a strong reputation.
- Collaboration: Work collaboratively with the bar, events, and wider museum teams to deliver seamless experiences.
What You’ll Bring as Restaurant Manager?
- Proven experience leading a premium, high-volume restaurant with a strong knowledge of service standards and the ability to confidently bring food and beverage stories to the table.
- A hands-on leadership style, able to inspire your team and remain calm and decisive during busy service.
- Strong commercial and operational awareness, with experience managing reservations, labour, financial performance, and guest satisfaction.
