About the Role
As Restaurant Manager, you will play a key role in delivering the exceptional dining experience that Marcliffe is renowned for, leading the restaurant in the Conservatory.
You will lead the day-to-day operation of the restaurant, inspiring and developing a dedicated team to deliver outstanding service with warmth, professionalism, and genuine Scottish hospitality.
From welcoming guests through the door to overseeing every detail of their dining experience, you will be visible, hands-on, and passionate about creating memorable occasions.
Working closely with our Executive Chef and senior leadership team, you will help shape service standards, guest experiences, team development, and commercial performance.
Key Responsibilities
- Lead the daily operation of the restaurant in the Conservatory, ensuring consistently exceptional standards of service and hospitality.
- Create a warm, welcoming, and professional environment for every guest.
- Lead, coach, motivate, and develop the restaurant team, building a strong culture of teamwork and excellence.
- Ensure service standards are maintained across every aspect of the guest journey.
- Work closely with the Executive Chef to deliver seamless food and beverage service.
- Maintain strong knowledge of menus, wines, spirits, and the wider Marcliffe offering, ensuring the team can confidently guide and advise guests.
- Take an active role in guest engagement, building relationships with regular guests and creating memorable experiences.
- Monitor service quality and respond confidently and professionally to guest feedback.
- Support recruitment, onboarding, training, and ongoing development of the restaurant team.
- Manage rotas, staffing levels, and operational requirements effectively.
- Drive sales and support the achievement of departmental revenue and profitability targets.
- Monitor stock, wastage, costs, and operational efficiencies.
- Ensure all health, safety, licensing, food hygiene, and compliance standards are consistently maintained.
- Work collaboratively with other departments across the hotel to ensure a seamless overall guest experience.
- Support wider hotel operations and events when required.

About You
We are looking for an experienced restaurant professional who combines luxury hospitality standards with genuine warmth and personality.
You will ideally have:
- Previous experience as a Restaurant Manager, Assistant Restaurant Manager, or senior restaurant leader within a luxury hotel, fine dining restaurant, or high-end hospitality environment.
- Strong leadership and people-management skills.
- A genuine passion for food, wine, service, and hospitality.
- Excellent communication and interpersonal skills.
- A calm, confident, and visible presence on the restaurant floor.
- Strong attention to detail and an uncompromising approach to service standards.
- Commercial awareness and an understanding of restaurant performance, costs, and revenue.
- Experience of training and developing hospitality teams.
- The ability to work effectively in a fast-paced environment while maintaining composure and professionalism.
- A natural ability to build strong relationships with guests and colleagues.
- Flexibility to work evenings, weekends, and across a busy hotel operation.

Experience within a five-star or luxury environment would be highly desirable, as would a strong knowledge of wine and fine dining service.
