We are currently seeking an assured, inspiring and commercially astute Restaurant Manager to lead our exciting new Asian restaurant, launching in spring/summer 2027.

The restaurant will be inspired by some of the greatest culinary capitals of Asia, bringing together exceptional Japanese and Chinese cuisine, world-class drinks and cocktails, immersive design and genuine hospitality to create an experience unlike anywhere else in Scotland.

The new restaurant will be housed in the North Lodge, a standalone building nestled in the grounds of the hotel. Throughout the years, the lodge has served many different purposes, once housing the office of Jackie Stewart, who founded the Shooting School at Gleneagles in 1985.

Location: Auchterarder, just off the A9. Gleneagles is also within easy reach of a number of Scottish towns and cities: Edinburgh City Centre (1hr), Glasgow or Dundee (50mins), Stirling and Perth (25mins).

Here's a bit more detail on what we see you doing in this role:

  • Leading the restaurant floor with confidence and energy, orchestrating lunch and dinner service across our five-day operation while creating a vibrant atmosphere where every guest feels genuinely welcomed and exceptionally cared for
  • Together with our Head Chef, you’ll provide inspirational leadership for the restaurant, building a culture of collaboration where front and back of house operate seamlessly as one team
  • Taking full accountability for the commercial performance of the restaurant, balancing operational excellence, labour management and profitability with an uncompromising commitment to exceptional guest experiences
  • Championing the theatre of contemporary Asian hospitality, ensuring every detail, from service and presentation to tableside moments and beverage rituals, is delivered with precision, confidence and flair.
  • Inspiring, coaching and developing a high-performing team, creating a culture built around curiosity, continuous learning and pride in delivering world-class hospitality
  • Building exceptional knowledge across Japanese and Chinese cuisine, sake, wine, cocktails and premium teas, ensuring your team confidently guides guests through every aspect of the experience
  • Continually seeking opportunities to innovate, surprise and delight, creating memorable experiences that inspire loyalty and position the restaurant as a true destination
  • As one of the restaurant's founding leaders, you’ll help shape its culture, standards and reputation, establishing a new benchmark for contemporary Asian dining at Gleneagles
  • Interacting with our guests, always warm, professional, helpful and doing everything you can to exceed their expectations; playing your part in making their stay with us luxurious in every way

  • You have fantastic experience leading premium or luxury restaurants, ideally within contemporary Asian, Michelin-recognised or destination dining environments
  • A genuine passion for Japanese and Chinese cuisine, world-class beverages and the craftsmanship that underpins unforgettable hospitality shines through in everything you do
  • Ambitious, positive and committed to helping establish one of the UK's leading contemporary Asian restaurants, creating exceptional experiences for guests while inspiring your team to perform at their very best
  • An exceptional host and collaborative leader, you work in true partnership with your Head Chef to create outstanding guest experiences and an engaged, high-performing team
  • You combine strong commercial awareness with operational excellence, using insight and initiative to continually improve performance without compromising quality
  • Thriving in fast-paced luxury hospitality, remaining calm, decisive and solutions-focused while maintaining exceptional standards, are all second nature to you
  • You possess exceptional attention to detail and understand that consistency is what transforms great service into truly memorable experiences
  • Passionate about developing people through coaching, mentoring and leading by example, you create an environment where colleagues can flourish
  • Highly motivated and possessing an immense sense of pride in your work; you're passionate about delivering the high standards for our guests in line with the Gleneagles brand
