We are now seeking a passionate, guest-focused, and operations-savvy Restaurant Manager to lead the daily rhythm of our signature dining experience. This is more than a managerial role - it’s an opportunity to shape one of London’s most thoughtful and sustainable culinary destinations while creating unforgettable moments for every guest who walks through our doors.

About You...

  • Passionate about hospitality and guest experience, with at least 3 years of leadership experience in a fast-paced restaurant or hotel setting.
  • A strong, positive leader who can motivate, develop, and support a diverse team.
  • Organized, proactive, and calm under pressure — you see challenges as opportunities to grow.
  • Skilled in managing rotas, payroll, training calendars, health & safety protocols, and operational systems like Fourth.
  • Confident communicator with strong interpersonal and administrative skills.
  • Flexible and ready to meet the dynamic needs of a 24-hour operation.

What You’ll Do...

  • Lead the front-of-house team with purpose and presence, setting a high bar for service and performance.
  • Manage all daily operations including opening/closing procedures, guest queries, and compliance checks.
  • Maintain and update key tools like the Food Bible, Allergy Matrix, and training documentation.
  • Create and oversee the weekly staff rota, holidays, and attendance records.
  • Conduct team meetings, 1:1s, onboarding, and performance check-ins.
  • Be the go-to when the General Manager is away — leading with confidence and clarity.
  • Champion a culture of health, safety, and accountability across every shift.
  • Support the execution of special menus, events, and collaboration with hotel departments.
