Restaurant & Bar Manager

Location: The Hobson, Cambridge

We're looking for a talented and ambitious Restaurant & Bar Manager to take a leading role within the kitchen operation of Oz & Isle, the signature restaurant at The Hobson Cambridge.

Oz & Isle offers a contemporary dining experience inspired by Australian hospitality, combining quality ingredients, vibrant flavours, and a strong beverage-led concept.

The Role

Reporting directly to the DM/ Hotel Manager, you will take full ownership of the daily operation of the restaurant, bar, breakfast service, and events business.

You will lead and develop the team, drive service standards, ensure strong commercial performance, and create memorable guest experiences.

This is a hands-on operational role requiring visibility on the floor, strong leadership, and a genuine passion for hospitality.

Key Responsibilities

  • Lead the day-to-day operation of the restaurant, bar, and breakfast service.
  • Manage, coach, and develop supervisors and team members.
  • Drive guest satisfaction and service excellence.
  • Take ownership of labour management and rota planning.
  • Manage stock control, ordering, supplier relationships, and inventory processes.
  • Monitor departmental performance, revenue opportunities, and cost control.
  • Support the growth of events and private dining business.
  • Manage guest feedback and service recovery.
  • Ensure compliance with food safety, licensing, health & safety, and company procedures.
  • Work closely with the Hotel Manager to achieve departmental and hotel objectives.

About You

  • Previous experience as a Restaurant Manager, Bar Manager, or Food & Beverage Manager.
  • Strong leadership and people management skills.
  • Experience managing labour costs, stock control, and departmental budgets.
  • Excellent organizational and communication skills.
  • A hands-on approach with the ability to lead from the front.
  • Passionate about delivering exceptional guest experiences.
  • Experience within a hotel environment is advantageous.
