Restaurant Manager at Sea Containers
Green & Fortune offers high-quality hospitality experiences across London, with Sea Containers, on Blackfriars Bridge, offering hospitality catering, bespoke events, and scenic views of London skyline and Thames.
This is a hands-on leadership role, with the main focus on leading our restaurant operation and delivering an exceptional guest experience through every service. Alongside the restaurant, you will also have oversight of our wider retail operation, including one café and one staff dining outlet, ensuring consistent standards, strong team performance and smooth day-to-day operations across all areas.
We are looking for someone who is confident leading from the front, commercially minded and passionate about food, service and people.

What Makes You the Restaurant Manager?
- Restaurant Operations
Be a key presence on the floor, leading the restaurant through every stage of service and ensuring standards, pace, organisation and attention to detail are consistently delivered. You will take ownership of the day-to-day restaurant operation and be visible and hands-on during busy services. - People & Leadership
Lead, motivate and develop the restaurant and retail teams, setting clear expectations and creating an engaged, confident team that takes pride in delivering great service. You will support recruitment, onboarding, training, rotas, performance management and ongoing development. - Food & Guest Experience
Champion a genuine guest-first culture. Bring menus and product knowledge to life, ensure the team can confidently answer guest questions and deliver a warm, professional and memorable experience. You will also take ownership of guest feedback and service recovery, using feedback to drive continuous improvement. - Commercial Performance
Take responsibility for supporting the commercial performance of the restaurant and wider retail operation through effective labour planning, stock control, cost management and operational efficiency. Monitor performance, identify opportunities and balance exceptional service with commercial awareness. - Retail Oversight
Alongside your primary restaurant responsibility, oversee the day-to-day operation of our café and staff dining areas. Ensure these outlets maintain high standards of service, presentation, cleanliness and operational efficiency, working closely with the relevant teams and managers. - Collaboration
Work closely with the Head Chef, kitchen, bar, events and wider management teams to ensure everyone is aligned on bookings, VIPs, menus, service timings, staffing and the wider needs of the business. Strong communication and effective handovers will be essential.

What You’ll Bring As The Restaurant Manager
- Proven experience managing a busy restaurant operation, with strong knowledge of service standards and the confidence to take ownership during busy service periods.
- A hands-on leadership style, with a genuine presence on the floor and the ability to lead a team through challenging and high-volume services.
- Strong food and beverage knowledge, with the confidence to communicate menus, dishes, allergens and service expectations to both guests and team members.
- Experience leading, coaching and developing teams, with the ability to set clear expectations and build a culture of accountability, engagement and pride.
- Good commercial and operational awareness, including experience with rotas, labour planning, stock control, cost management, bookings and performance.
- The ability to work collaboratively with kitchen, bar, events and senior management teams.
- Experience overseeing multiple outlets or different areas of a hospitality operation would be advantageous.
- Strong organisational skills, with the ability to prioritise and manage competing operational demands.
- A strong understanding of food safety, health & safety and compliance requirements.
