Perle Hotels are seeking an ambitious and people-focused Restaurant Manager to lead Dulse & Brose, the signature restaurant at The Bosville Hotel, in the heart of Portree.

This is an exciting opportunity to take ownership of a much-loved restaurant, lead a talented front-of-house team, and shape memorable dining experiences in one of Scotland's most iconic destinations.

About Dulse & Brose

Dulse & Brose is a modern Scottish restaurant that celebrates Skye's incredible natural larder. The menu champions fresh seafood, Highland meats, and seasonal island produce, delivered through confident, unfussy cooking.

The atmosphere is refined yet relaxed; contemporary, welcoming, and rooted in genuine Highland hospitality. Guests dine in a stylish setting overlooking Portree Harbour, enjoying thoughtful food and a carefully curated drinks list.

What We Offer

  • £30,000 - £33,000 salary (depending on experience)
  • Annual performance bonus (up to 5% of salary, based on KPIs)

The Role

As Restaurant Manager, you will be the driving force behind Dulse & Brose's day-to-day success. You'll lead from the floor, set service standards, and create a culture where guests feel genuinely looked after and the team feels proud of what they deliver.

Working closely with the Head Chef and Food & Beverage leadership, you'll balance exceptional guest experience with strong commercial performance.

Key responsibilities include:

  • Leading daily restaurant operations with a guest-first mindset
  • Recruiting, training, and developing a confident and motivated front-of-house team
  • Setting and maintaining high service standards across every service
  • Collaborating on menus, specials, and GP margins with the kitchen team
  • Managing rotas, labour, costs, and KPIs to meet financial targets
  • Handling guest feedback with professionalism, warmth, and solutions-focused leadership
  • Ensuring full compliance with health & safety and licensing standards

This role suits a hands-on manager who enjoys being present on the floor, coaching their team, and creating polished yet relaxed dining experiences.

  • Proven experience in a supervisory or management role within a busy restaurant or hotel environment
  • A genuine passion for food, drink, and great hospitality
  • Strong leadership skills with the ability to inspire and retain great people
  • Solid understanding of GP margins, menus, and service delivery
  • Commercial awareness with experience managing KPIs and costs
  • A calm, resilient, and hands-on approach
  • Excellent communication and organisational skills
  • A desire to build both a career and a lifestyle on the Isle of Skye
