Dumbleton Hall: A Manor Reborn

Set in the richest pocket of the Cotswolds, Dumbleton Hall blends heritage, romance, culture, and countryside elegance. Our story reaches back to the Holland family, the literary circles of Gaskell, Dickens, and Darwin, the Mitford sisters, and poet laureate John Betjeman. Today, we continue this tradition by offering guests a living narrative of culture and hospitality.

Our Character & Place

Between Shakespeare’s Stratford and Cheltenham’s Gold Cup, our manor stands as the grand gateway to theatre, racing, walking country, and village life. Our interiors draw inspiration from the Belle Époque and the 1920s, with William Morris and Frederic Leighton as artistic touchstones. Our gardens, lake, cascades, and arboretum create an Arcadian idyll where guests arrive as visitors and depart as part of the Dumbleton story.

Role Overview

As the Restaurant Manager you will be expected to take complete control and accountability for the day-to-day food and beverage operations throughout the restaurant to ensure that the highest level of service is offered to guests.

The ideal candidate would posses excellent knowledge of food and beverage and be passionate about hospitality. At least two years in a similar position is essential along with excellent, team management skills.

Key Responsibilities Of The Role

  • Control the Restaurant operations including Breakfast, Lunch and Dinner Service.
  • To be out and about in the hotel, managing the day to day operation and ensuring exceptional guest service at peak times.
  • You would control costs through correct stock usage, storage, rotation, par stock levels maintained and minimise waste to meet with Company standards.
  • Keeping the team up to date about departmental, hotel and company activities through daily communications.
  • Ensure prompt resolution of customer complaints and keep a close eye on customer feedback through Trip Advisor and other sites, taking on board feedback and making recommendations for changes.
  • To lead and develop an energetic workforce, with involvement in recruitment, learning and development, team engagement initiatives and all other people management responsibilities.
  • To ensure the Company Health and Safety, Food Safety and COSHH legislation are adhered to; this will involve carrying out appropriate training.

Requirements Of The Role

  • Department Manager or exceptional Duty Manager looking for their first HOD role
  • Excellent Customer service skills, standards driven, good organisational skills
  • To be able to make decisions in a fast paced environment and to enjoy it
  • To be great at up-selling – anticipating customer needs as well as improving the bottom line
  • To be able to manage the team and resources available to ensure that the departments are equipped for service via cost controls, stock monitoring and good rota management
  • To be able to communicate to and motivate your team providing day to day leadership and direction
